I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

Tips:

  1. Select Fresh Mahi-Mahi: Use the freshest mahi-mahi you can find; this will ensure the best taste and texture.
  2. Properly Clean and Season: Make sure to properly clean and season the mahi-mahi before cooking. Rinse it well and pat dry before applying salt, pepper, and any desired herbs or spices.
  3. Prepare the Orange and Graham Cracker Crust: Mix the melted butter, crushed graham crackers, and grated orange zest in a bowl until well combined. Press the mixture firmly into the bottom of a baking dish to create a crust.
  4. Layering the Ingredients: Arrange the seasoned mahi-mahi fillets on top of the orange and graham cracker crust. Layer the orange slices, chopped onion, and bell pepper on top of the fish.
  5. Bake at High Temperature: Preheat your oven to a high temperature, usually around 400°F (200°C). This will help to quickly cook the fish and create a crispy crust.
  6. Monitor Cooking Time: Keep an eye on the cooking time to avoid overcooking the fish. The exact time may vary depending on the thickness of the mahi-mahi fillets. Aim for an internal temperature of 145°F (63°C) for flaky and tender fish.
  7. Garnish and Serve: Once the fish is cooked through, remove it from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs like parsley or cilantro and serve with lemon wedges for an extra burst of flavor.
