4 medium boneless, skinless chicken breasts
1 cup all-purpose flour
3 large eggs
3 cups Panko breadcrumbs
Cooking spray
1 teaspoon sesame oil
2 teaspoons olive oil
1 Tablespoon minced garlic
1 teaspoon grated fresh ginger
1/4 cup hoisin sauce
1 1/2 cups orange marmalade
2 Tablespoons low sodium soy sauce
1 teaspoon crushed red pepper flakes (optional)

Steps:

  • Preheat the air fryer to 400°F.
  • Cut the chicken breasts into 1-inch pieces.
  • Add the flour to a sealable plastic bag then add the chicken and seal the bag. Shake the bag until the chicken is coated all over.
  • Add the eggs to a shallow dish and whisk them until combined. Add the breadcrumbs to a second shallow dish. Remove each piece of chicken from the bag, shake off any excess flour, then dip it in the eggs then breadcrumbs. Repeat the coating process with all of the chicken pieces.

1/4 cup butter, melted
1 (6 ounce) can orange juice, frozen and thawed
1/4 cup honey
3/4 cup breadcrumbs, plain
1/2 cup flour
1 teaspoon paprika

Steps:

  • Heat over to 375.
  • Put chicken in a bowl and pour melted butter over chicken, set aside.

1 (4 pound) whole chicken, rinsed and patted dry
½ cup butter, cut into 1 tablespoon sized pieces
2 navel oranges, halved
salt and pepper to taste
2 cloves garlic, minced
½ cup butter, melted
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 sprigs fresh sage

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Pour the chicken broth into a small roasting pan, and set aside.
  • Loosen the skin from the breasts and thighs of the chicken. Stuff the butter pieces evenly underneath the skin of the chicken, and place into the roasting pan. 1 (16 ounce) can frozen concentrate orange juice
3 (16 ounce) cans water, from the orange juice can (Mix with the O.J.)
1 egg
1/4 cup soy sauce
4 cups lightly-crushed corn flakes (not grownd)

Steps:

  • Mix the O.J., water, egg, and soy sauce in a bowl large enough to hold the cut up chicken and marinate. Marinate the cut up pieces (Covered In Refrigerator)over night or longer if time allows. Rotate the pieces daily 2-3 times. Be sure each piece is fully covered while marinating. Add more water if needed.
  • When ready to bake: In a gallon size zip-lock bag, add the corn flakes. With out zipping up as fully closed, use a rolling pin to crush the flakes evenly.

5 small tangerines or clementines
1/2 packed cup dark brown sugar
1/4 cup soy sauce
1 1/2 teaspoons rice vinegar or distilled white vinegar

1 (4-pound) whole chicken

8 slices peeled fresh ginger

An instant-read thermometer inserted in the thickest part of the breast should register 155 degrees and, in the leg, 170 degrees. The chicken will continue to cook while it rests.
  • Transfer the chicken to a cutting board and let rest for about 5 minutes. If the pan sauce isn't already syrupy, bring it to a boil over medium-high heat on the stovetop. Be sure to wear oven mitts or use a kitchen towel to hold the skillet (the handle is hot). Cook, stirring occasionally, until the bubbles grow larger and paler brown, and the sauce is the consistency of syrup, about 5 minutes. Discard the ginger.
