I found this while looking for recipes to use all the fish we've been catching. It's similar to Russ's Crab Cakes he makes and just as good. We cooked ours in a little oil in a pan 9no oven) but have submitted the original recipe.

Tips for Making the Perfect Oven-Baked Thai-Style Fish Cakes:

- Choose a firm-fleshed fish, such as salmon, tuna, or cod, for the best results. - To ensure a crispy exterior and a moist interior, make sure to mix the fish mixture thoroughly and form it into firm patties. - Gently pan-fry the fish cakes until golden brown before baking them in the oven. This will help to seal in the flavor and prevent them from becoming dry. - If you don't have panko breadcrumbs, you can use crushed crackers or bread crumbs as a substitute. - For a vegetarian version of this recipe, substitute the fish with mashed tofu or vegetables such as sweet potato or zucchini. - Serve the fish cakes with a dipping sauce of your choice, such as sweet chili sauce, tartar sauce, or a simple lemon-herb sauce. - To make the dipping sauce, you can mix equal parts mayonnaise and sour cream, and add a squeeze of lemon juice, chopped fresh herbs, and a pinch of salt and pepper to taste.

These oven-baked Thai-style fish cakes are a delicious and healthy appetizer or main course that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own taste preferences. So next time you are looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
