Provided by Kare for Kitchen Treaty

Time 2h15m

Number Of Ingredients 4

1 large zucchini (sliced into rounds about 1/8" to 1/16" thick, either with a sharp knife or a mandolin)
1-2 tablespoons extra virgin olive oil
1/2 teaspoon salt (recommended: kosher salt or coarsely ground sea salt)
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 200 degrees Fahrenheit. Use convection bake setting if your oven allows.
  • Place sliced zucchini on paper towels and let sit for 10 minutes. Blot the tops of the zucchini with another paper towel to absorb as much moisture as possible.
  • Line two baking sheets with parchment paper and place the zucchini on the pans in a single layer, making sure not to overlap.
  • Pour olive oil into a small bowl and lightly brush onto the zucchini.
  • Season with the salt and pepper.
  • Place in oven and bake for about 2 hours, flipping zucchini after about an hour, until zucchini is crispy and starting to brown. Start checking them at about 1-1/2 hours in as ovens can vary. Any pieces that are crispy and starting to brown should be removed.
  • Serve immediately!

1/3 1/3 1/3 cup whole grain breadcrumbs, optional Panko (homemade breadcrumb recipe)
1/4 1/4 1/4 cup finely grated parmesan cheese, reduced fat
1/4 1/4 1/4 teaspoon black pepper
to or sea salt to taste
1/8 1/8 1/8 teaspoon garlic powder
1/8 1/8 1/8 teaspoon cayenne pepper
3 3 3 tablespoons low-fat milk

Steps:

  • Preheat oven to 425 degrees. Combine in a small mixing bowl, breadcrumbs, parmesan cheese, black pepper, salt, garlic powder, and cayenne pepper. Dip zucchini slices into milk and dredge into bread crumbs to coat both sides. Note: It may be necessary to press crumbs onto zucchini slices to ensure the crumbs stick. Arrange zucchini on a non-stick cookie sheet and lightly mist with a non-stick cooking spray. We use Misto Olive Oil Sprayer. Or, place zucchini on a wire rack sprayed with non-stick cooking spray. If using a rack, place rack on a cookie sheet. Bake 15 minutes, turn over and continue baking until golden, approximately 10-15 minutes (being careful not to burn). Allow to cool to room temperature before storing in an airtight container. NOTE: Zucchini Chips will continue to get crispier while cooling. NOTE: For gluten free chips, use gluten-free bread crumbs.

Number Of Ingredients 6

1 large zucchini, cut into 1/8" - 1/4" slices
1/3 c whole grain breadcrumbs, optional panko
1/4 c finely grated parmesan cheese, reduced fat
1/4 tsp black pepper kosher or sea salt to taste
1/8 tsp each: garlic powder and cayenne powder
3 Tbsp low fat milk

Steps:

  • 1. Yields: 4 servings | Calories: 99 Directions thinly slice the zucchini with a mandolin slicer. Mix all dry ingredients together, except zucchini. Dip slices in the milk then dump them into a gallon size bag filled with the dry seasoning, shake to coat, dump onto a cookie sheet, bake at 425F until crispy brown

Tips:

  • Choose firm and evenly sized zucchinis, as they will bake more evenly.
  • Slice the zucchinis thinly and uniformly, as this will help them crisp up better.
  • Toss the zucchini slices with olive oil, salt, and pepper before baking. This will help them brown and add flavor.
  • Spread the zucchini slices in a single layer on a baking sheet. This will help them crisp up evenly and prevent them from steaming.
  • Bake the zucchini slices at a high temperature, such as 425°F (220°C), for a short period of time. This will help them crisp up quickly and prevent them from becoming soggy.
  • Watch the zucchini slices closely while they are baking, as they can burn easily.
  • Serve the zucchini chips immediately, as they are best when they are hot and crispy.

Conclusion:

Oven-baked zucchini chips are a delicious and healthy snack that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste preferences. Whether you like them plain or seasoned, zucchini chips are a great way to get your daily dose of vegetables.
