This is so simple and easy and the okra tends to not be nearly as gummy or slimy when roasted. Chopped tomato makes a great addition when we have some handy.

1 tablespoon olive oil
2 teaspoons kosher salt, or to taste
2 teaspoons black pepper, or to taste

12 ounces small okra (small whole ~ frozen okra, thawed and patted dry)
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 lemon (zest of)
1 1/2 tablespoons parmigiano-reggiano cheese (finely grated)
1/2 teaspoon coarse salt (or to taste)
fresh ground black pepper (to taste)
1 tablespoon parmigiano-reggiano cheese (additional garnish, finely grated)

Steps:

  • Preheat oven to 425°F.
  • Toss whole okra with oil, lemon juice, zest, 1 1/2 tablespoons grated cheese, salt and pepper. Place okra on a rimmed baking sheet and roast until tender, about 15 minutes.

1 1/2 pounds baby Yukon gold potatoes, halved
1 1/2 pounds baby red-skinned potatoes, halved
Kosher salt
4 cups cubed day-old sourdough bread (crusts removed)
1/3 cup extra-virgin olive oil
2 cloves garlic, grated
2 teaspoons finely grated lemon zest, plus wedges for serving
Freshly ground pepper
1/4 cup chopped fresh parsley
1/2 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 450 degrees F. Put the potatoes in a large pot and cover with cold water by 1 inch; season with salt. Bring to a boil and cook over medium-high heat until just tender, about 7 minutes; drain.

Salt to taste
2 tablespoons extra virgin olive oil
Fresh thyme leaves to taste optional

  • Preheat the oven to 450 degrees. Rinse the okra, and drain on a kitchen towel. The okra should be dry. Trim away the stem ends and the tips, just the very ends, and then place the okra in a large bowl. Salt to taste, and toss with the olive oil until coated.
