Time 35m

Yield Makes 4 to 6 servings

Number Of Ingredients 15

1 pt. shucked fresh oysters, undrained
2 cups milk
Kosher salt
Freshly ground black pepper
1/4 cup butter
1 shallot, minced
1 small garlic clove, minced
2 tablespoons all-purpose flour
1 cup half-and-half
2 tablespoons sherry
1/2 teaspoon Worcestershire sauce
1/8 teaspoon celery salt
Fresh lemon juice
Dash of hot sauce (such as Tabasco)
Oyster crackers, saltine crackers, or buttered toast

Steps:

  • Drain oysters, reserving oyster liquor (about 1 cup). Heat milk and oyster liquor in a small saucepan over medium heat, whisking occasionally to prevent scorching, 3 to 4 minutes or until mixture just begins to steam. Add oysters, and season with desired amount of salt and pepper. Cook 4 to 5 minutes or until the edges of the oysters just begin to curl. Remove pan from heat. Using a slotted spoon, transfer oysters to a plate to prevent them from overcooking.
  • Melt butter in a large saucepan over medium heat. Add shallot and garlic, and cook, stirring often, 4 minutes or until tender. Sprinkle flour over shallot mixture, and cook, whisking constantly, 1 to 2 minutes or until completely incorporated and bubbly. Gradually whisk in half-and-half and next 3 ingredients. Bring to a boil, whisking constantly. Gradually stir in reserved milk mixture and oysters. Reduce heat to medium-low, and cook, stirring occasionally, just until warmed through. Season to taste with salt, pepper, lemon juice, and hot sauce. Serve with crackers.

Capt. Phil's Oyster Stew image

We are huge fans of the Discovery Channel's "Deadliest Catch" and Capt. Phil Harris is one of our favorites on the show. I found this archived from 1997 courtesy of Seatlle PI & Emeril Lagasse. I have not made this yet, but am posting for future use. Cooking & prep time is estimated.

Tips:

  • Use fresh oysters: Fresh oysters have a briny, sweet flavor that is essential for a great oyster stew. If you can't find fresh oysters, you can use frozen oysters, but be sure to thaw them completely before using.
  • Choose the right type of milk: Whole milk or half-and-half will give your stew a richer flavor than skim milk. You can also use a combination of milk and cream for an even richer flavor.
  • Don't overcook the oysters: Oysters are delicate and will toughen if they are overcooked. Cook them just until they are opaque and tender, about 3 minutes.
  • Season to taste: Oyster stew should be seasoned with salt, pepper, and paprika. You can also add other spices, such as garlic powder, onion powder, or celery salt, to taste.
  • Serve immediately: Oyster stew is best served immediately after it is made. If you need to make it ahead of time, you can store it in the refrigerator for up to 2 days. Reheat it gently over low heat before serving.

Conclusion:

Oyster stew is a classic comfort food that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With a few simple tips, you can make a delicious oyster stew that your family and friends will love.
