Time 1h5m

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 9

3 bananas, mashed (approx. 1 1/2 cups)
3 eggs
1 tablespoon vanilla
1 tablespoon honey
1/4 cup vegan palm oil shortening
2 cups blanched almond flour
1/2 teaspoon sea salt
1 teaspoon baking soda
1 cup chocolate chips (optional)

Steps:

  • Pulse bananas, eggs, vanilla, honey and shortening in a food processor.
  • Pulse in almond flour, salt and baking soda.
  • If desired, pulse chocolate chips into batter.
  • Scoop batter into a greased 7.5 x 3.5 inch loaf pan.
  • Bake at 350 degrees for 55-60 minutes.
  • Remove from oven and allow to cool.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your bread will be.
  • Mash the bananas well. This will help to ensure that they are evenly distributed throughout the bread.
  • Use a combination of almond flour and coconut flour. This will give your bread a moist and tender texture.
  • Add a little bit of honey or maple syrup. This will help to sweeten the bread without adding too many carbs.
  • Be careful not to overmix the batter. Overmixing can make the bread tough.
  • Bake the bread until a toothpick inserted into the center comes out clean. This will ensure that the bread is cooked through.

Conclusion:

Paleo banana bread is a delicious and healthy alternative to traditional banana bread. It is made with simple, wholesome ingredients and is free of gluten, grains, and refined sugar. This bread is perfect for breakfast, lunch, or a snack. It can also be enjoyed as a dessert. If you are looking for a healthier way to enjoy banana bread, then this recipe is for you.
