Hearty and delicious soup. You can poach cod, haddock, flounder, and salmon. I love to serve this on a cold winter day. For a stew-like consistency, simmer for longer. You can serve the stew over rice if desired.

1 tablespoon butter, or more to taste
⅓ cup diced onion
⅓ cup diced celery
⅓ cup diced carrot
4 cups chicken broth
1 (14.5 ounce) can diced tomatoes with Italian herbs
⅓ cup white wine
⅓ cup lemon juice
1 pound tilapia fillets, or more to taste
1 ½ teaspoons dried Italian herbs
salt and ground black pepper to taste

Steps:

  • Melt butter in a 5- to 6-quart pot over medium heat. Add onion, celery, and carrot; saute until tender, about 5 minutes. Pour in chicken broth, tomatoes, wine, and lemon juice. Bring to a boil. Add tilapia, herbs, salt, and pepper. Reduce heat, cover pot partially, and simmer until tilapia starts to flake, about 10 minutes.
  • Transfer tilapia to a plate and cover to keep warm. Simmer cooking liquid until slightly thickened, 10 to 15 minutes. Return tilapia to the pot and heat through, 1 to 2 minutes.

POACHED GARLIC SOUP



Poached Garlic Soup image

This comes from the cookbook What's Cooking America? by Linda Stradley & Andra Cook. This soup is delicious - and the accompanying garlic bread is to die for. Note: 30 cloves may sound like a lot of garlic, but poaching it mellows it out quite a bit and the resulting flavor is soft and complex. Hope you enjoy!

30 garlic cloves, peeled
7 cups chicken broth, divided
1/2 cup butter
1/2 cup diced white onion
8 small new potatoes, peeled, diced, and reserved in cold water
salt and pepper
1 cup heavy cream
1 cup milk
3 tablespoons parmesan cheese, grated
6 slices sourdough bread, thinly sliced and lightly toasted
6 tablespoons butter

Steps:

  • In a medium saucepan over medium-high heat, combine garlic cloves and 3 cups of chicken broth; bring to boil and poach 15 minutes or until soft. Remove garlic cloves to a small bowl and mash with a fork; set aside for use in making Toasted Garlic-Butter Bread. Cook and reduce chicken broth to a glaze; remove from heat and set aside.
  • In a large soup pot over low heat, melt 1/2 cup butter. Add onion and saute until soft. Drain potatoes; stir into butter and onion. Season with salt and pepper. Add 4 cups chicken broth. Increase heat to medium-high; simmer, uncovered, 25 minutes or until the potatoes are softened. Remove from heat and let cool 10-15 minutes.
  • In a food processor (or blender, if vented or if liquid is completely cooled - warning: putting hot liquids in airtight blender will cause 'explosion'), puree soup; return to soup pot. Add garlic-chicken glaze; stir until well blended. Stir in heavy cream, milk, salt, pepper; cook over low heat another 10 minutes. Remove from heat. Serve in soup bowls and garnish with parmesan cheese.
  • To make Toasted Garlic-Butter Bread: Preheat broiler. In a small bowl, combine mashed garlic cloves and the 6 tablespoons of room temp butter until well blended. Spread garlic mixture evenly over top of the bread slices. When ready to serve, place under broiler for a few minutes until top is lightly browned and bubbly.

CREAMY NORWEGIAN FISH SOUP

When we lived in Norway we used to eat lots of fish...this recipe reminds me of a fish soup which was very common there. You can use other fish and shellfish. The potatoes and tomatoes are ingredients I have been adding over the years and listed them as optional.

2 1/2 tablespoons butter
2 1/2 tablespoons plain flour
4 -5 cups fish stock or 4 cups vegetable stock
1 medium carrot, finely chopped in strips
1 -2 cup leek, finely chopped in strips
1 -2 potato, peeled and cut into small cubes (optional)
1 (14 ounce) can chopped tomatoes (optional)
12 peeled raw shrimp (approx)
12 mussels (approx) or 12 small scallops (approx)
4 -6 ounces catfish (or fish of your own choice)
1/2 cup heavy cream
1/4 cup chopped fresh parsley
salt and pepper
2 tablespoons sour cream (optional)
2 teaspoons lumpfish caviar (optional)

Steps:

  • Melt 2 tablespoons of the butter, add the flour, stir for about 2 minutes without browning the flour.
  • Add the fish stock at intervals, stirring all the time, let it boil gently for 5-10 minutes.
  • Melt the rest of the butter and saute the carrots and leek and potatoes, if using, for approx 10 minutes.
  • Add the tomatoes (if using) and simmer for another 5 minutes, then add the shrimps, mussels, fish and the cream.
  • Simmer for another 5 minutes, or until the fish and shellfish are tender.
  • Add the parsley and salt and pepper to taste.
  • Serve garnished with sour cream and the lumpfish caviar.

POACHED FISH WITH SAFFRON VERMICELLI



Poached Fish with Saffron Vermicelli image

For this delightful and simple Moroccan dish, use fish fillets-monkfish or any firm-fleshed fish such as bream, turbot, haddock, cod-and have them skinned.

Number Of Ingredients 8

1 1/2 pounds fish fillets, skinned
Salt
10 ounces dry vermicelli
Salt
1/2 teaspoon crushed saffron threads or powdered saffron
4-5 tablespoons extra-virgin olive oil
Pepper
4 tablespoons chopped parsley or cilantro

Steps:

  • Poach the fish in barely simmering (not boiling) salted water for 5-10 minutes, until the flesh looks opaque when you cut into it.
  • At the same time, break the vermicelli in your hand into small pieces and cook in about 5 cups of boiling salted water with the saffron until just tender, stirring vigorously so that the vermicelli do not stick together. Drain, reserving about 1 cup of the saffron water to use as a sauce. (Keep the remainder if you like-there is very little left-to pour into a soup or a stew.) Beat the olive oil into the water, season with salt and pepper, and add the parsley or cilantro.
  • Serve the fish on a bed of vermicelli, with the sauce poured over.
