I always have a few of these in the freezer for summer barbecues when I don't care to eat beef hamburgers (I have been known to tote one or two of these along with me to family barbecues to throw on the grill whenever I know that beef burgers are going to be the only main dish)

1 lb ground turkey
1/2 cup dry breadcrumbs (I use whole wheat)
3 tablespoons onions, minced
2 tablespoons ketchup
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1/4 teaspoon paprika
2 garlic cloves, minced
1/4 teaspoon liquid red pepper seasoning (optional)
black pepper, to taste
6 hamburger buns, to serve

Steps:

  • Combine all ingredients in large bowl.
  • Shape into 6 patties.
  • Pan-fry, broil, or grill until lightly browned and cooked through, about 5 minutes per side.

2 cloves garlic, finely chopped
1/2 Vidalia onion, finely chopped
1 1/2 pounds ground turkey
2 teaspoons Dijon mustard
1 teaspoon soy sauce
Salt and freshly ground black pepper
8 slices pepper jack cheese, cut from an 8-ounce block
1 beefsteak tomato, sliced into 3/4-inch thick rounds
Olive oil
4 large onion buns or rolls
Spicy Mayo Sauce, recipe follows
Lettuce
1/2 cup mayonnaise
2 tablespoons hot chili sauce (recommended: Sriracha)
1/2 lime, juiced

Steps:

  • Preheat grill over medium-high heat.
  • Add the garlic, onion, turkey, mustard, soy sauce, and salt and pepper, to taste, to a large mixing bowl. Mix well with a wooden spoon. Divide the turkey into 8 equal-sized balls and flatten them into patties. Lay 2 slices of cheese on 4 of the patties and cover each with another patty. Pinch the edges to seal the patties closed, so the cheese will not melt out.
  • Season the tomatoes with salt and pepper, to taste, and brush with olive oil. Grill for 2 minutes per side. Remove from the grill to a plate. Toast the buns on the grill and set aside.
  • Grill the burgers until cooked through, about 5 to 6 minutes per side. Transfer the burgers to the buns and top with Spicy Mayo Sauce, lettuce and grilled tomatoes.
  • Combine all the ingredients in a small bowl.

1 cup roughly chopped fresh chives
2 tablespoons olive oil
2 pounds free-range ground turkey meat
1/4 cup finely diced shallots
2 tablespoons Dijon mustard
1 tablespoon kosher salt
1 red bell pepper, finely diced
4 brioche burger buns
4 homemade or store-bought roasted tomato halves
1 bunch watercress, cleaned and stemmed
1/2 cup homemade or store-bought ranch dressing

Steps:

  • Place the chives in the pitcher of a blender with the olive oil. Blend until smooth.
  • In a medium bowl, add the chive puree, turkey, shallots, mustard, salt and bell peppers. Using clean hands, blend the mixture together until incorporated. Portion the turkey into 4 large burger patties and place on a tray and refrigerate.
  • On a hot grill or in a hot saute pan, sear the burgers on each side and then reduce the heat or move the burgers to a cooler spot on the grill, and continue to cook for 10 to 12 minutes. To test for doneness, poke the burgers with a skewer and press down to see if the juices run clear, or a meat thermometer inserted in the center reads 150 degrees F.
  • Split and toast the buns, and then top each with a burger, a piece of roasted tomato, some watercress and some ranch dressing. Top each with the other half of the buns, then place a large skewer through the burgers and serve!

After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

2 lbs ground turkey (I use 7% fat rather than fat free)
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
4 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 teaspoons Dijon mustard
2/3 cup ricotta cheese

Steps:

  • Mix all ingredients together with hands.

1 pound lean ground turkey
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
3/4 teaspoon salt
Freshly ground pepper to taste
4 hamburger buns, preferably whole wheat
1 tablespoon canola oil, or use pan spray
Sliced tomato
Sliced onion
Iceberg lettuce
Pickles

Steps:

  • Grate the onion on the fine holes of a grater. You should have about two tablespoons of grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, Worcestershire sauce, ketchup, salt and pepper. Using a fork, mix together well. Shape into four patties - the mixture will be quite moist - and press the patties into ½-inch thick rounds.

1 clove garlic
2 tablespoons olive oil
1 1/3 pounds ground turkey breast
3 tablespoons dried bread crumbs
2 tablespoons barbecue sauce
3 tablespoons quick-cooking oats (not instant)
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon toasted wheat germ
1/4 teaspoon salt or 1 tablespoon liquid aminos
Ground black pepper

Steps:

  • 1. Peel the onions and cut into 1/8" to 1/4" pieces. Peel the garlic and chop finely. Warm the oil in a large skillet over medium heat. Add the onions and garlic and cook over medium heat, stirring often, for about 10 minutes, or until the onions start to brown. Add water, 1 tablespoon at a time, as necessary to prevent burning. Remove from the heat, transfer to a large bowl, and let cool for 10 minutes.
  • 2. To the same bowl, add the turkey, bread crumbs, barbecue sauce, oats, basil, oregano, wheat germ, salt or aminos, and pepper to taste. Mix well. Shape the mixture into 9 burgers.
  • 3. Coat a large nonstick skillet with cooking spray. Cook the burgers over medium heat for about 5 minutes, or until browned and crispy. Flip the burgers carefully and cook for 5 minutes longer, or until golden brown and a thermometer inserted in the center registers 165° and the meat is no longer pink. Serve the burgers hot.
