Venison Cheddar-Jalapeno Summer Sausage image

This is a nice change from regular summer sausage. The cheddar and jalapenos give it a bit of a spicy kick that is sure to please at gatherings. We serve this at the 'Beast Feasts' we host every year where all the dishes are from wild game. This recipe works well with beef as well.

1 cup cold water
3 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
2 teaspoons mustard seed
1 teaspoon garlic powder
1 teaspoon coarse ground black pepper
2 teaspoons liquid smoke flavoring
3 pounds lean ground venison
1 cup shredded Cheddar cheese
2 jalapeno peppers, seeded and minced

Steps:

  • Stir the water, curing mixture, mustard seed, garlic powder, black pepper, and liquid smoke in a large bowl until the curing mixture has dissolved. Wrap each log tightly with aluminum foil, and refrigerate for 24 hours.

PAN-ROASTED VENISON WITH CREAMY BAKED POTATO AND CELERIAC

Pan-Roasted Venison with Creamy Baked Potato and Celeriac image

Venison is a fantastic lean dark meat. You can swap the celeriac for parsnips, Jerusalem artichokes or even fennel, but you must keep the ratio of potatoes in there so it tastes delish.

Provided by Jamie Oliver

Categories     main-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 15

4 tablespoons butter, melted, plus a couple extra knobs, divided
2 pounds potatoes, peeled
1 small celeriac, peeled and halved
Sea salt and freshly ground black pepper
1 pint heavy cream
1 clove garlic, peeled and finely chopped
1/2 a small bunch fresh sage, leaves picked and roughly chopped
4 ounces freshly grated Parmesan, divided
10 juniper berries, crushed with the side of a knife
3 sprigs fresh rosemary, leaves picked and chopped
2.2 pounds venison loin in 1 large piece, trimmed
Olive oil
1 bulb garlic, unpeeled
Water
1 wineglass of good-quality red wine, like Pinot Noir

Steps:

  • Preheat the oven to 350 degrees F and butter a large, shallow baking dish.
  • Slice the potatoes and celeriac into disks just under 1-inch thick. Place the slices into a large pan, cover with cold water, season with salt and pepper and bring to the boil. Simmer for 5 minutes, then drain in a colander and allow the vegetables to steam dry for a minute or so. Put back into the pan with the cream, chopped garlic, sage, half the Parmesan and a good pinch of salt and pepper. Mix together, then tip into the buttered baking dish and spread out evenly. Pour any mixture left in the pan over the top. Sprinkle over the remaining Parmesan, cover tightly with aluminum foil and cook in the preheated oven for 35 to 40 minutes until golden brown.
  • Combing the juniper berries and rosemary, add a pinch of salt and pepper, then sprinkle over a board. Rub the venison all over with olive oil before rolling it across the board and pressing it into the flavorings. Heat an ovenproof frying pan over a high heat and add a glug of olive oil. Sear the venison for a couple of minutes on all sides, then remove the pan from the heat. Add the smashed garlic bulb and any leftover flavorings from the chopping board. Shake everything together, pour in a splash of water to cool things down and place in the oven. Cook according to your liking - about 8 minutes will give you medium venison.
  • When the potatoes are cooked, take them out of the oven, remove the foil and sprinkle over the remaining Parmesan. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes until bubbling and golden.
  • Take the venison out of the oven and let it rest on a plate, covered loosely with foil. Pour away any excess fat. Squash the garlic cloves with a fork and discard the skins. Mix the garlic with the herbs in the pan and place on the heat. Pour in the red wine, simmer until it has reduced by half and then add the butter. Stir with a wooden spoon, scraping up all the sticky meaty goodness from the bottom. As soon as the sauce comes together, take the pan off the heat, correct the seasoning and stir in another knob of butter. Carve the venison into desired-thickness. Pour any resting juices from the plate back into the pan, then pour your gravy through a sieve over the meat and serve with the potato and celeriac bake.

Another favourite venison recipe. This recipe considers farm-raised deer which is readily available in better butcher shops, or some larger super markets. A favourite cook offers up this recipe, and can be found in "Lee Bailey's Cooking for Friends". I like Lee Bailey's recipes because he shops for fresh ingredients; I have tried to make a habit of doing just that for each dinner party.

ROAST VENISON

Roast Venison image

This is an adaptation of recipe in a Southern Living cookbook. I have used for over 30 years, so it has evolved over time. This was the recipe I bought my larding needle for, and now use it occasionally with other recipes. This is a very long recipe, but most of the time is the slow cooking.

Provided by Sweetiebarbara

Categories     Deer

Time 7h

Yield 1 roast, 6 serving(s)

Number Of Ingredients 16

1 venison roast (leg)
4 ounces salt pork
1 teaspoon salt
1 teaspoon pepper (freshly ground)
1 tablespoon ground ginger
1 teaspoon dried oregano
1 tablespoon olive oil
1/2 cup butter (melted)
1 cup orange juice
1 cup stock
1 cup sherry wine (very dry)
1/3 cup flour
1/2 cup chianti wine
1/2 cup sherry wine (very dry)
1 orange (make 1 tablespoon zest, then slice)
1/2 cup black currant jelly

Steps:

  • Place salt, pepper, ginger and oregano in small plate.
  • Cut fat back into strips about 2"x1/4" (to fit easily into larding needle).
  • Roll fat strips in herb seasoning until well coated. (if you have other things to do, you can freeze these as they are easier to work with cold).
  • Place strips in larding needle and push through meat.
  • Rub roast with oil and put in roasting pan.
  • Pat any remaining seasoning onto roast.
  • Pour butter over roast.
  • Mix orange juice, stock, and sherry together and pour over roast.

  • Make a smooth paste from some of the fat and the flour, then add the Chianti, sherry, and orange zest.
  • Stir back into the natural gravy, and cook over low heat for 10 minutes.
  • Put roast back into pan, spread 1/4 cup of jelly over roast, cover pan, and continue in oven for another hour, basting as needed.

Tips:

  • To tenderize the venison, marinate it in a mixture of olive oil, soy sauce, garlic, and herbs for at least 4 hours or overnight. This will help to break down the tough fibers and make the meat more flavorful.
  • Sear the venison in a hot skillet over high heat to create a crust. This will help to lock in the juices and prevent the meat from drying out.
  • Roast the venison in a preheated oven at 400 degrees Fahrenheit for 15-20 minutes, or until the internal temperature reaches 135 degrees Fahrenheit for medium-rare.
  • To make the tangerine and roasted jalapeño sauce, combine the ingredients in a blender and blend until smooth. Season to taste with salt and pepper.
  • To make the sweet onion and sage gratin, caramelize the onions in butter, then add the cream, milk, sage, and cheese. Season to taste with salt and pepper.
  • Serve the venison with the tangerine and roasted jalapeño sauce and the sweet onion and sage gratin.

Conclusion:

This pan-roasted venison recipe is a delicious and elegant dish that is perfect for a special occasion. The tender venison is complemented by the tangy tangerine and roasted jalapeño sauce and the creamy sweet onion and sage gratin. This dish is sure to impress your guests.
