Categories     Potato

Number Of Ingredients 8

2 large baking potatoes (about 1 1⁄2 pounds, scrubbed well
1⁄4 cup olive oil
1 tablespoon Emeril's Original Essence or Creole Seasoning
3⁄4 teaspoon salt
1⁄4 cup finely grated Parmigiano-Reggiano cheese
1 tablespoon sweet paprika
1⁄2 teaspoon garlic powder
1⁄4 teaspoon onion powder

Steps:

  • Instructions 1. Preheat the oven to 425°F. 2. Pat the potatoes dry and cut them lengthwise into 1⁄2-inch-thick slices. Turn each side flat and slice again lengthwise into even 1⁄2-inch-thick fries. Place the potatoes in a mixing bowl and add the olive oil, Essence, and 1⁄4 teaspoon of the salt. Toss well to combine. Then transfer the fries to a large baking sheet and arrange them in one even layer so that they are not touching. Roast, scraping the potatoes from the baking sheet with a metal spatula and turning them over halfway through, until golden brown and crispy, 30 minutes. 3. While the potatoes are cooking, combine the cheese, paprika, garlic powder, onion powder, and the remaining 1⁄2 teaspoon salt in a small bowl and stir to blend. 4. When the potatoes are crisp and brown, remove them from the oven and transfer to a serving platter. Sprinkle the potatoes with the Paprika-Parmesan Salt, and serve hot. Yield: 4 to 6 servings

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for oven fries because they are starchy and have a fluffy interior. Yukon Gold potatoes and red potatoes can also be used, but they will not be as crispy.
  • Cut the potatoes evenly: This will help them cook evenly. Aim for fries that are about 1/2-inch thick and 3-4 inches long.
  • Soak the potatoes: Soaking the potatoes in cold water for 30 minutes before cooking will help remove excess starch and make them crispier.
  • Dry the potatoes: Be sure to pat the potatoes dry before tossing them with oil. This will help them crisp up in the oven.
  • Use plenty of paprika: Paprika is the key ingredient in this recipe, so don't be shy with it. You can use smoked paprika for a more intense flavor.
  • Don't overcrowd the baking sheet: If you overcrowd the baking sheet, the fries will not cook evenly. Spread them out in a single layer so that they have plenty of room to crisp up.
  • Bake the fries until they are crispy: The fries are done when they are golden brown and crispy on the outside and fluffy on the inside. This will take about 25-30 minutes.
  • Serve immediately: Oven fries are best served immediately after they are cooked. They will start to lose their crispness if they sit for too long.

Conclusion:

Paprika oven fries are a delicious and easy-to-make side dish that is perfect for any occasion. They are crispy on the outside and fluffy on the inside, and they are packed with flavor. Serve them with your favorite dipping sauce for a perfect snack or side dish.
