12 asparagus stalks (thick ones if possible)
6 oz (175 g) Fontina or Parmesan (Parmigiano Reggiano)
12 slices Parma ham, total weight approximately 5 oz (150 g)
salt
freshly grated Parmesan (Parmigiano Reggiano)

  • To cook the asparagus: take each stalk in both hands and bend and snap off the woody end, then trim with a knife to make it neater. Lay the asparagus stalks on an opened fan steamer (or an ordinary steamer will do) - they can be piled one on top of the other. Season with salt, place them in a frying pan or saucepan, pour in about 1 inch (2.5 cm) of boiling water from the kettle, then put a lid on and steam for 4-6 minutes. If you're using Fontina, slice it into thin strips using a sharp knife. If you're using Parmesan, coarsely grate it. 16 fresh asparagus, peeled and boiled al dente
16 slices parma ham, thinly sliced (or Serrano ham)
4 ounces blue cheese
1 small onion, finely diced
1/2 cup sherry wine
1 tablespoon creme fraiche
2 romaine lettuce hearts (to garnish)
salt and pepper

Steps:

  • Heat a pan to medium high heat.
  • Wrap each asparagus with one piece of ham.
  • Add a bit of oil to the pan and fry each asparagus until the ham is golden brown.
  • You may have to do two batches, keep the first batch warm in the oven.

1 small puff pastry sheet, 1 3x4-inch piece (buttered)
1 baby asparagus, freshly steamed al dente
1 teaspoon gorgonzola (blue cheese substituted if necessary)

Steps:

  • Take 3 sheets and butter the first then lay the 2nd on top, then butter the 2nd sheet, and then lay the 3rd sheet on top Now slice the sheet in 2 1/2 inch strips, cut each strip 4 inches. Each strip should be 4 inches long by 2 1/2 inches wide.
  • Take the asparagus that has been trimmed and steamed, al dente, and place on the cut puff pastry, now brush with a little melted butter and then put a teaspoon full of cheese on it.
