1/2 cup grated parmesan cheese
3 minced garlic cloves
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
fresh coarse ground black pepper
4 boneless skinless chicken breasts (6 to 7 ounces each)
1/4 cup minced fresh basil
1/4 cup mayonnaise
lemon wedge, for serving

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 425°.
  • Combine breadcrumbs, Parmesan, garlic, oil, salt, and pepper to taste in bowl.
  • Pat chicken dry with paper towels and transfer to 13"x 9" baking dish which has been sprayed with Pam.

1 garlic clove, peeled
1/4 cup flat leaf parsley
2 slices whole wheat bread (I use low carb)
1/4 cup parmesan cheese, grated
2 tablespoons olive oil
1/4 teaspoon salt
fresh ground black pepper
1 1/2 lbs salmon fillets, skinless
4 teaspoons Dijon mustard

Steps:

  • Heat oven to 400. Lightly coat your baking dish with non-stick spray (I always use olive oil in a Misto- love those things).
  • In a food processor, mince the garlic clove then add the parsley and pulse until combined, about 15 seconds. Add the bread, cheese, oil, salt and a few grinds of black pepper. Pulse until well combined.
  • Arrange the fish or meat in the baking dish. Spread with mustard then pat the crumbs on top of each one.
  • Bake until browned and cooked through-
  • 20 min or so for salmon.
  • 15 min or so for flounder.
  • 25 min or so for chicken.
  • 30 min or so for pork.
  • Cooking times will depend on the thickness of your fillets.

2 Tbsp dijon mustard
1/2 tsp thyme leaves, chopped
kosher salt
1/4 tsp cayenne pepper
4 chicken breasts, boneless and skinless
3/4 c parmesan cheese
3/4 c panko bread crumbs, or dried coarse baquette breadcrumbs
cooking spray

Steps:

  • 1. Preheat oven to 450 degrees.
  • 2. Mix mustard, thyme, 1/2 tsp salt and the cayenne pepper in a medium bowl. Add the chicken breasts, turn to coat completely, set aside.
  • 3. In medium shallow bowl, combine parmesan cheese and panko breadcrumbs. Dredge the chicken pieces in panko mixture, pressing coating into the meat.
  • 4. Put chicken on a rack over a baking sheet. Spray chicken with a quick burst of cooking spray; and place in middle of the oven. Bake until chicken is golden brown, and cooked through, about 20 minutes. Let rest 5 minutes before cutting and serving.
