PARMESAN CRUSTED CAULIFLOWER

Parmesan Crusted Cauliflower image

I am always looking for ways to serve veggies that my family will eat or that can be made ahead of time for company. This serves both well. The recipe works for each head of cauliflower. For two heads, double the amounts of garlic, olive oil, butter, cheese, and bread crumbs. Can be made the day before and reheated.

Time 50m

Yield 6 serving(s)

Number Of Ingredients 7

1 head cauliflower, steamed and broken into florets
1 tablespoon olive oil
1 tablespoon butter
1 garlic clove, minced
1/4 cup breadcrumbs
1/4 cup parmesan cheese, plus
1 tablespoon parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees.
  • Arrange florets in a baking dish.
  • Heat skillet. Add oil and butter.
  • When butter is melted, add garlic and saute until garlic is tender.
  • Add bread crumbs and 1/4 cup cheese. Toss well.
  • Sprinkle bread crumb mixture over florets.
  • Top with 1 tablespoon grated cheese.
  • Cover and bake for 30 minutes.

Tips:

  • To make perfectly crispy cauliflower, ensure the florets are evenly coated in the egg mixture and then the Parmesan breadcrumb mixture.
  • Bake the cauliflower at a high temperature (425°F/220°C) for a shorter duration (20-25 minutes) to achieve a golden-brown crust without overcooking the florets.
  • For a more flavorful and nutty taste, use freshly grated Parmesan cheese.
  • Feel free to add your favorite seasonings and spices to the breadcrumb mixture, such as garlic powder, paprika, or chili flakes.
  • For a healthier version, you can use almond flour or whole wheat bread crumbs instead of white bread crumbs.
  • Serve parmesan crusted cauliflower as an appetizer, side dish, or even as a main course with your favorite dipping sauce.
