ALMOST AS SIMPLE PASTA WITH PARMESAN, HERBS, AND FRESH GARLIC
Another family favorite that lends itself to easy variations -- tweak the taste to complement the day's main dish by your choice of herbs. You probably have all these ingredients handy in your pantry and refrigerator. I swear the kids would eat this every day if I'd make it that often. I can't personally vouch for freezing it, but I know that it reheats well in the microwave after being refrigerated. Cooking time is mainly cooking the pasta.

PANTRY PASTA WITH GARLIC, ANCHOVIES, AND PARMESAN
This dish is for when a 3 p.m. hang turns into a dinner party or when you've had too long of a day at work. But just because it's comfort food doesn't mean there aren't techniques. They're the same ones that go into every restaurant pasta you've ever loved: Salt the boiling water; cook the pasta al dente; create a silky sauce that marries pasta water, Parmesan, olive oil, and butter.

Steps:
- 1. In a pot, bring the olive oil to medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Mix in the butter until melted. Add the salt, pepper and chicken stock. Raise the heat to high and let it come to a boil.
- 2. Once it is at a rolling boil, add the pasta and cook for as long as the box's directions say. You want it aldente'. I always do the shorter time. Reduce the stove to medium heat and mix in the parmesan until completely melted. Turn off the heat and stir in the cream and parsley. Sprinkle with some parmesan and serve immediately. ( I heat the cream a little in the micro before adding, but do not boil)
- 3. You can add so many foods to this. I just like it plain and simple as always.
LEMON GARLIC PARMESAN SHRIMP PASTA

Steps:
- 1. In a large pot cook the pasta in boiling water according to package directions. Drain and set aside
- 2. Using a large sauce pan, heat olive oil and 2 Tablespoons of butter. Add the garlic and red pepper flakes and cook until fragrant.
- 3. Add the shrimp and salt & pepper to taste. Cook until the shrimp starts to turn pink. Add Italian seasoning.. The recipe suggests adding the spinach and cook until wilted. I added the spinach with the next step and found the spinach did not get quite so wilted. Preferred doing it this way.
- 4. Add the pasta back to the pot while still warm with the remaining butter, parmesan and parsley. Add in the spinach. Stir until mixed, the butter is melted and the spinach has wilted
- 5. Add the lemon juice before serving and serve while hot.
Tips:
- Use high-quality ingredients. Fresh, flavorful ingredients will make your pasta dish shine. Look for high-quality parmesan cheese, garlic, and olive oil.
- Don't overcrowd the pan. When cooking the pasta, make sure to use a large enough pot so that the pasta has room to move around and cook evenly.
- Cook the pasta al dente. Al dente pasta is cooked through but still has a slightly firm bite to it. This will help the pasta hold its shape and flavor better in the sauce.
- Don't rinse the pasta. Rinsing the pasta after cooking will remove the starch that helps the sauce cling to it. Instead, reserve some of the pasta cooking water and add it to the sauce to help it thicken.
- Use a good quality olive oil. Olive oil is a key ingredient in this dish, so make sure to use a good quality extra virgin olive oil.
- Don't burn the garlic. Garlic burns easily, so be careful not to cook it over high heat. Cook the garlic in the olive oil over medium heat until it is fragrant and golden brown.
- Add the pasta to the sauce immediately. Once the sauce is ready, add the cooked pasta to it immediately and toss to coat. This will help the pasta absorb the flavors of the sauce.
- Serve with grated parmesan cheese. Parmesan cheese is the perfect finishing touch for this pasta dish. Serve it with grated parmesan cheese on top.
Conclusion:
Parmesan garlic pasta is a quick and easy weeknight meal that is sure to please the whole family. This simple pasta dish is versatile and can easily be customized to your liking. Add some grilled chicken or shrimp for a protein boost. Experiment with different cheeses like romano or asiago instead of parmesan. Or switch up the vegetables and add some broccoli or zucchini. No matter how you make it, this Parmesan Garlic Pasta is sure to be a hit!
