1 teaspoon vegetable oil, or as needed
2 tablespoons freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon ground black pepper
2 pounds red potatoes, halved
1 tablespoon vegetable oil, or as needed
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.

4 cups cubed day-old sourdough bread (crusts removed)
1/3 cup extra-virgin olive oil
2 cloves garlic, grated
2 teaspoons finely grated lemon zest, plus wedges for serving
Freshly ground pepper
1/4 cup chopped fresh parsley
1/2 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 450 degrees F. Put the potatoes in a large pot and cover with cold water by 1 inch; season with salt. Bring to a boil and cook over medium-high heat until just tender, about 7 minutes; drain.

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika

2 pounds russet potatoes, cut in 1/4-inch slices
Nonstick cooking spray, for the baking sheets

2 strips bacon
1/3 cup chopped onion
2 cups diced raw potatoes
1/2 cup sliced fresh carrots
2 cups boiling water
1 1/2 teaspoons salt

1/4 teaspoon paprika
1 teaspoon dried parsley flakes
2 tablespoons flour
2 cups milk

Steps:

  • Fry bacon until crisp in a saucepan large enough for making soup. Remove bacon. Add onion and sauté until limp. Add potatoes, carrots, boiling water and salt. 1.8kg floury potatoes , cut in half, or quarters if large
5 tbsp olive oil
2 tsp plain flour
100g parmesan (or vegetarian alternative), finely grated
handful parsley , finely chopped
4 rosemary sprigs, leaves finely chopped
pinch of grated nutmeg

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Place the potatoes into a pan of salted water, bring to the boil and simmer for 2 mins exactly. Drain well and toss in a little of the oil to coat.
  • Stir the flour, parmesan, herbs and nutmeg together in a dish with a small pinch of salt and toss the potatoes in the mix until evenly coated. Heat a good layer of oil in a shallow, non-stick roasting tray on a hob or in the oven, then carefully add the potatoes to the tray. Turn the potatoes to coat them in the oil and roast for 40 mins, turning once. If they feel like they are sticking to the pan, don't move them, just leave them for the full time. Roast until golden brown and crisp, and serve straight away.
