Yield 2 people

Number Of Ingredients 10

2 teaspoons butter
2 tablespoons minced shallots
1 garlic clove, minced
1/2 cup basmati rice
1 cup fat-free, low sodium chicken broth
1/4 dry white wine
2 tablespoons grated fresh Parmesan cheese
2 tablespoons minced fresh parsley
1/8 teaspoon freshly ground black pepper
Dash of sea salt

Steps:

  • 1. Melt butter in a small saucepan over medium-high heat. Add shallots and garlic, saute 1 minute. Stir in rice, saute 1 minute. Stir in broth and wine, bring to a boil. Cover, reduce heat and simmer 15 minutes. 2. Remove from heat, stir in cheese, parsley, pepper and salt.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the pilaf will taste. Use long-grain rice, freshly grated Parmesan cheese, and flavorful broth.
  • Rinse the rice: Rinsing the rice before cooking helps to remove the starch and prevent the pilaf from becoming gummy.
  • Toast the rice: Toasting the rice in a little bit of butter or oil before adding the broth helps to bring out its flavor.
  • Use a flavorful broth: The broth is what gives the pilaf its flavor, so use a broth that you enjoy the taste of. Chicken broth, vegetable broth, or beef broth are all good options.
  • Add some vegetables: Vegetables like peas, carrots, and celery are a great way to add some extra flavor and nutrients to the pilaf.
  • Garnish with fresh herbs: Fresh herbs like parsley, thyme, or rosemary add a nice finishing touch to the pilaf.
