- Using a sharp knife, peel some of the skin, leaving a band for color.
- Place the potatoes in a saucepan, and cover them with water. Add salt, the parsley sprigs and bay leaf. Bring to a boil, and simmer for 15 minutes or until tender.
- Drain the potatoes, discarding the parsley sprigs and bay leaf. Add the butter, chopped parsley, cumin, salt and pepper to the potatoes in the same saucepan. Stir gently to coat the potatoes, and serve immediately.

This is a very good potato dish , I stem baby red potatoes and smother them in real butter and parsley flakes. I enjoy a dollop of sour cream on mine but they can be served with out if desired.

Steps:
- 1. Cut potatoes into wedges and put into a large pot with a steamer rack , add just enough water to come to the bottom of the rack.
- 2. Cover and cook on high heat and allow to stem for 20 minutes or until the potatoes are fork tender. ( where you can poke the potato and it goes in really easy)
- 3. Transfer the cooked potatoes to a Pyrex dish and top with tabs of the butter , sprinkle with the parsley and the salt & pepper.
- 4. Cover and let hot potatoes melt the tabs of butter.
- 5. Stir up before serving.
- 6. I like to serve mine with a dollop of sour cream on top.

- Preheat outdoor grill to high or oven to 500 degrees F.
- Rip 2 sheets of about 18in. long foil and stack them together.
- Cut potatoes into wedges and pile them on the center of the foil.
- Combine the garlic with the potatoes and sprinkle the EVOO, red pepper flakes, parsley, and lots of salt and pepper.
- Pull the ends of the foil together and fold them over, then close the opposite sides to form a packet.
