Categories     side-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 6

4 pounds Yukon gold potatoes
2 pounds parsnips
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/2 stick (1/4 cup) butter
2 tablespoons chopped chives

Steps:

  • Peel and cut the potatoes and parsnips into even sized pieces. Put them into a large pot, cover them with cold water, and add a large pinch of salt. Bring to a boil and simmer until the vegetables are fork tender, about 20 to 30 minutes. Meanwhile, in a small pot gently heat the cream and butter over low heat. When the vegetables are done drain them well. Put the vegetables back into the pot over medium heat. Gently stir them to remove any excess moisture; be careful not to burn them. While the potatoes and parsnips are still warm, press them through a potato ricer or food mill into a bowl. Add the warm cream a little at a time and beat with a wooden spoon until the potatoes are fluffy. Season with salt and pepper and gently stir in the chives. Serve immediately.

PASTA WITH PARSNIPS AND BACON

Pasta With Parsnips and Bacon image

They may seem like an unlikely duo, but pasta and parsnips work really well together, with the parsnips becoming almost like a sweet and soft extension of the pasta. And they're another vehicle for the creamy, bacon-rich sauce. You can roast the parsnips several hours ahead (they'll be fine at room temperature). But the rest of the dish is best made just before serving. Then serve it hot. There are few dishes that are cozier on a cold winter night.

Time 45m

Yield 2 servings

Number Of Ingredients 9

3 medium parsnips (3/4 pound), peeled and cut into 1/2-inch pieces
1 1/2 tablespoons extra-virgin olive oil, more for drizzling
Kosher salt and black pepper, as needed
1/2 pound dried campanelle or farfalle pasta
1/4 pound bacon, diced
1 medium leek, thinly sliced
3/4 cup heavy cream
2/3 cup grated Parmesan cheese
2 tablespoons chopped parsley

Steps:

  • Heat oven to 400 degrees. Toss parsnips with oil and season with salt and pepper. Roast, tossing occasionally, until parsnips are golden and tender, about 25 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions until 1 minute before it's al dente. Drain.
  • In a large skillet over medium-high heat, brown the bacon until crisp, about 5 minutes; use a slotted spoon to transfer bacon to a paper-towel-lined plate to drain. Discard all but 1 tablespoon of fat from the pan.
  • Return skillet to heat and add leeks. Cook in remaining bacon fat until softened, about 5 minutes. Stir in heavy cream and cooked bacon. Simmer mixture until slightly thickened, 2 to 3 minutes.
  • Stir in pasta, parsnips and cheese. Simmer until heated through and cheese is melted, then remove from heat. Season with salt and pepper; toss with parsley. Serve drizzled with olive oil, with plenty of black pepper on top.

Categories     Milk/Cream     Onion     Potato     Side     Bake     Casserole/Gratin     Parsnip     Winter     Gourmet

Number Of Ingredients 8

1 large red onion
2 tablespoons water
2 parsnips (about 1/2 pound)
2 small russet (baking) potatoes (about 3/4 pound total)
1 1/4 cups low-fat (1%) milk
3/4 cup chicken broth
1 1/2 tablespoons all-purpose flour
a pinch freshly grated nutmeg

Steps:

  • Halve onion lengthwise and cut crosswise into 1/4-inch-thick slices. In a large saucepan cook onion in water, covered, over moderate heat, stirring occasionally, 5 minutes, or until softened. Remove cover and cook onion until any liquid in saucepan is evaporated.
  • Preheat oven to 425°F.
  • Peel parsnips and potatoes. Grate parsnips coarse and cut potatoes crosswise into 1/8-inch-thick slices. In a 2-cup measure or bowl whisk together milk, broth, and flour until combined well. Add milk mixture to onion with parsnips, potatoes, nutmeg, and salt to taste and simmer, stirring frequently, 1 minute.
  • Pour vegetable mixture carefully into a shallow 1 1/2-quart baking dish and bake in lower third of oven 45 minutes, or until top is golden brown and potatoes are tender when pierced with a knife.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your dish.
  • Peel and dice the parsnips and potatoes evenly. This will help them cook evenly.
  • Don't overcrowd the pan when cooking the parsnips and potatoes. This will prevent them from cooking evenly.
  • Season the parsnips and potatoes generously with salt and pepper. This will help to enhance their flavor.
  • Cook the parsnips and potatoes until they are tender, but not mushy. This will take about 15-20 minutes.
  • Add the bacon and onion to the parsnips and potatoes and cook until the bacon is crispy and the onion is softened. This will add flavor and texture to the dish.
  • Serve the parsnips, potatoes, and bacon immediately. This dish is best enjoyed hot.

Conclusion:

Parsnips, potatoes, and bacon is a classic English country dish that is easy to make and delicious. This dish is perfect for a weeknight meal or a special occasion. The parsnips and potatoes are roasted until they are tender and slightly caramelized, and the bacon adds a smoky flavor. This dish is sure to be a hit with your family and friends.
