A while ago, I wanted to serve something light and unique as a finger food for a friend's party. In my research I came across this recipe from a network site. Steps:
- 1. Blend together, in medium bowl, cream cheese and mayonaise.
- 2. Divide mixture into four separate portions and put into individual bowls.
- 3. Into one bowl, combine pineapple along with the 4oz. portion cream cheese, set aside.
- 4. Into the next bowl, place the chopped green olives and mix with the cream cheese, set aside.
- 5. Combine the cucumbers into the third bowl along with the cream cheese, combine and set aside.
- 6. Add the chopped pecans into the last bowl and combine with cream cheese, set aside.
- 7. To assemble sandwiches, spread one of the fillings on top of the white bread slices and top with slices of wheat bread. Cut each sandwich into triangle, squares or circles. Arrange the cut sandwiches on to a large platter by type of sandwich filling. Garnish with parsley, bacon pieces, poppy seeds or pecans.

Steps:
- Heat oven to 400•.
- Cut each biscuit in half CROSSWISE, (not horizontal through middle), making a half moon shape.
- Place on ungreased cookie sheet, spread tops with a little*mustard.
- Bake for 10-14 minutes or til golden brown.
- Cool on wire rack 10 minutes.
- Meanwhile, in small bowl, combine onions and butter, mix well.
- In another small bowl mix mustard, mayo and honey.
- Split each biscuit open with sharp knife.
- Spread bottoms with butter mixture.
- Top each with ham, cheese and lettuce.
- Spread inside tops liberally with mustard-mayo-honey sauce.
- Place on top/lid.
- Spear an olive onto frilled pick, then stick through sandwich.
- You can make a half a recipe if you want, but if serving even 10-12 people, best to make 40!
