4 eggs, separated
1/2 cup sugar plus 1 tablespoon
generous 1/3 cup oil
1 and 1/2 teaspoons Gefen Vanilla Sugar, optional
1/2 cup Gefen Potato Starch
1 tablespoon fresh lemon juice or Heaven & Earth Lemon Juice
1/8 -1/4 cup sugar
3 plums, peeled and diced
2 apples, peeled and diced
1/2 mango, peeled and diced

Steps:

  • Beat egg whites and ½ cup sugar until stiff peaks form.
  • Beat yolks with 1 tablespoon sugar, oil, vanilla sugar, if using, and potato starch. Combine lemon juice, remaining sugar, and fruit in mixing bowl.
  • Divide half of batter between 15 muffin tins. Spoon fruit mixture atop. Pour remaining batter over fruit.
  • Bake at 350°F for 45 minutes or until tops of muffins turn golden brown.

No. 2 can crushed pineapple (save juice)
3 apples, peeled and grated
½ to ¾ cup matzah meal
1 lb. prunes, chopped
½ lb. apricots, chopped

Steps:

  • Preheat oven to 325°F. Grease a 7x11-inch pan. In a bowl combine the eggs, sugar and oil. In another bowl combine the pineapple with the juice, apples and matzo meal. Thoroughly combine the content of the two bowls. Add the prunes and apricots. Spoon the mixture into the prepared pan. Bake for 45 minutes or until golden brown.

2 onions, chopped
1 stalk celery, chopped
1 red pepper, chopped
3 carrots, grated
1 cup mushroom, chopped
3 egg whites
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon dried basil
1/4 cup matzo meal

Steps:

  • Preheat oven to 350 degrees F.
  • Cook spinach in microwave on HIGH for 4 minutes -Don't add any water.
  • Cool and squeeze dry.
  • Sauté in sprayed pan, onion, celery, red pepper, and carrots for 5 minutes until golden.

3/4 cup margarine or 3/4 cup butter, unsalted
1/4 teaspoon salt (optional)
2/3 cup sugar
4 cups matzo farfel
2 (15 ounce) cans crushed pineaple in juice, drained
6 eggs
2 teaspoons cinnamon

Steps:

  • Mix eggs in a small bowl.
  • Put the margarine into a 9 X 13 inch pan and put into oven. When it is melted take out pan, swirl the margarine around in the pan making sure the pan is well greased. Pour the melted margarine into a large bowl and set aside.
  • Place a colander in the sink. Put the farfel in the colander and run warm water over the farfel. When the farfel starts to soften, turn the water off. Shake the excess water out. Dump the farfel into the large bowl with the melted margarine. Mix gently, using a rubber spatula.
  • Pour the sugar and the drained pineapple into the mixing bowl and mix gently.
  • Pour the beaten eggs in and mix gently. Add the cinnamon and mix.
  • Pour into prepared pan. Sprinkle the top with additional cinnamon.
