Categories     Chicken Breast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

2 tablespoons butter
2 tablespoons olive oil
1 boned skinned whole chicken breast, cut into 3/4-inch chunks (about 8 oz.)
1/4 cup chopped scallion
1 teaspoon minced garlic
1/2 cup heavy cream
8 ounces fresh mushrooms, thinly sliced
1 (16 ounce) can diced tomatoes, drained
1 cup frozen peas, thawed
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1/4 cup chopped fresh basil
8 ounces dried fettuccine or 1 lb fresh fettuccine
1/4 cup freshly grated parmesan cheese

Steps:

  • Heat large saucepan of salted water to boiling.
  • Heat butter and oil in large heavy skillet over medium heat. When foam subsides, add chicken, scallions, and garlic; cook, stirring occasionally, until chicken begins to brown, about 7 minutes. Stir in cream, mushrooms, tomatoes, peas, salt, and peppper; heat to boiling over high heat. Reduce heat to medium and simmer until sauce is slightly thickened and chicken is cooked through, 3-5 minutes. Stir in basil and remove from heat.
  • Meanwhile, cook pasta in boiling water until tender but still firm to the bite. Drain thoroughly and transfer to wide serving bowl.
  • Pour sauce over pasta, sprinkle with Parmesan, and toss to combine. Serve hot.

Tips:

  • For the best results, use high-quality ingredients, such as fresh chicken breasts, ripe tomatoes, and flavorful cheese.
  • Don't be afraid to experiment with different types of pasta. Penne, spaghetti, and linguine all work well in this dish.
  • If you don't have a meat mallet, you can use a rolling pin or even a heavy skillet to pound the chicken breasts thin.
  • Be sure to dredge the chicken breasts in flour before cooking. This will help them to brown evenly and prevent them from sticking to the pan.
  • Don't overcrowd the pan when cooking the chicken breasts. Cook them in batches if necessary.
  • Use a good quality marinara sauce for this recipe. You can either make your own or use a store-bought brand that you like.
  • Be sure to simmer the chicken breasts in the marinara sauce for at least 30 minutes. This will help them to become tender and flavorful.
  • Top the chicken breasts with plenty of cheese before baking. This will help them to brown and become bubbly.
  • Serve the pasta con pollo alla parmigiana immediately with a side of garlic bread or a salad.

Conclusion:

Pasta con pollo alla parmigiana is a classic Italian dish that is sure to please everyone at the table. It is a hearty and flavorful dish that is perfect for a weeknight meal or a special occasion.
