CLAM PASTA WITH BASIL AND HOT PEPPER

Clam Pasta With Basil and Hot Pepper image

The beauty of this dish is that the clams can be steamed in the time it takes to cook the pasta, so the whole affair can be put together quite rapidly. High heat and a covered pot will have the shells open in minutes.

Provided by David Tanis

Categories     dinner, easy, quick, weekday, pastas, main course

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 14

1 cup basil leaves
1 cup Italian parsley leaves
3 garlic cloves, smashed to a paste
1/4 cup olive oil
Salt and pepper
1 pound bucatini, spaghetti or linguine
3 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon crushed fennel seed, optional
1/2 teaspoon peperoncino (hot red-pepper flakes)
4 pounds small clams, such as little neck or Manila, rinsed of sand
1/2 cup dry white wine
Basil leaves, for garnish
Lemon wedges

Steps:

  • Make the purée: Grind basil and parsley together in a food processor. (Alternatively, hand chop herbs or pound them in a mortar.) Add garlic paste and 1/4 cup olive oil and pulse to combine. Season to taste with salt and pepper.
  • Bring a large pot of well-salted water to a rapid boil. Add pasta and cook according to package directions, taking care to keep pasta quite al dente. It's best to use a timer, and drain pasta as soon as it's done.
  • While pasta is cooking, heat 3 tablespoons olive oil in a heavy-bottomed wide pot with a lid over medium-high heat. Add minced garlic, fennel seed if using and pepperoncino, and let sizzle without browning, about 1 minute. Add clams, stirring to coat with a wooden spoon. Raise heat to high, add wine and put on the lid. Cook, covered, until all clams have opened, 5 to 7 minutes. Turn off heat. (Discard any clams that fail to open.)
  • Add cooked pasta and basil purée to pot and toss gently to combine. Transfer to a serving bowl. Garnish with basil leaves and lemon wedges.

HOT DOG PASTA SALAD

Hot Dog Pasta Salad image

The original recipe for this - which I've modified a bit - has been sitting in my computer recipe file for a long time - and I have no idea where it came from. At first I figured it was from the internet, but when I went looking with all my usual searching tools, I couldn't find it, so maybe it just showed up as an email virus attachment and parked itself in my recipe file, quietly waiting until I went insane enough to look for a salad recipe using hot dogs. Well, it happened one day last month and I decided to give it a go. I was sufficiently impressed with the results to share it with you. Oh, and kids seem to like this quite a lot as well. If you're going to serve it to little ones, make sure to cut the hot dogs up smaller (not just into circles) so as to avoid choking possiblities. Enjoy!

Provided by ThatBobbieGirl

Categories     Meat

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

6 ounces macaroni or 6 ounces other small salad-type pasta
5 hot dogs, boiled and sliced in rounds (or smaller bits for young children to avoid choking hazard)
1/2 cup mayonnaise
1 tablespoon yellow mustard (no substitutes)
2 teaspoons cider vinegar
salt and pepper (may omit)
1/3 cup thinly sliced sweet gherkin
2 green onions, thinly sliced (use both green and white parts) or 1/8 cup chopped yellow onion

Steps:

  • Cook macaroni according to package directions, just until tender.
  • Drain and rinse well with cold water.
  • Meanwhile, cook hot dogs as desired- grill'em, boil'em or pan-fry; cool enough to handle, then slice into circles.
  • If small children will be eating this, cut the circles in halves or quarters to avoid choking hazards.
  • Combine mayonnaise, mustard, vinegar and salt & pepper in small bowl.
  • Place hot dogs and pasta in large bowl and add remaining ingredients.
  • Pour dressing over and toss gently with two spoons until all the bits are coated with dressing.
  • Chill for two hours or longer in refrigerator before serving.

HOT CHICKEN AND PASTA

Hot Chicken and Pasta image

This is a chicken and pasta stir fry that is a bit spicy. I don't find it to be too hot, but if you have a tender mouth, I'd skip the chili oil and reduce the crushed red peppers. I like to use spaghetti, but the original recipe called for linguine. Recipe torn out of a newspaper from St. Petersburg, FL....no author mentioned. The secret to making this recipe easy is to have everything chopped and placed in order of addition to the wok, so your cooking time flows easily and smoothly.

Number Of Ingredients 13

Amazing Shrimp and Hot Italian Sausage over Angel Hair Pasta image

This is a great one dish meal with an Italian accent. The Shrimp and Hot Italian Sausage are accented with a Garlic Cream Sause.

Provided by aeb8889

Categories     One Dish Meal

Time 30m

Yield 6-8 serving(s)

fresh rosemary, to taste
1 quart heavy cream
3 bunches green onions
3 tablespoons flour, for thickening
1/2 cup water
parmesan cheese
romano cheese

  • Remove Italian Sausage from caseing. In an electric skillet or on top of the stove, brown very slowly the Italian sausage, the objective here is to brown it slow enough to allow the fat to run off into the skillet, add salt, pepper and press garlic, to the Italian Sausage once is has cooked.
  • While Sausage is cooking chop tops of green onions and set aside.
  • Mix water and flour together, make sure it is not lumpy and set aside.
  • Add shelled and deveined shrimp to sausage , allow to cook for 3 minutes.
  • Add Heavy Cream to Shrimp and Sausage, enough to cover over about an inch and a half, increase heat slightly, add water and flour mixture to thicken. Simmer to desired thickness. (Do not over cook shrimp).
  • Sauce should be the consistancy of alfredo sauce and light pink in color (from the sausage fat). Serve over fresh Angel Hair Pasta tossed with Extra Virgin Olive Oil. Add fresh chopped green onion tops, Rosemary, Fresh Fancy Grated Parmesean and Ramano Cheese -- enjoy.

Tips:

  • Choose the right pasta: For spicy dishes, a sturdy pasta like penne or rigatoni can hold up to the heat. For milder dishes, a more delicate pasta like angel hair or linguine may be a better choice.
  • Don't be afraid of the heat: Spicy dishes can be intimidating, but don't be afraid to experiment with different levels of heat. Start with a mild spice level and gradually increase it to your liking.
  • Use fresh ingredients: Fresh ingredients will always give your pasta dish the best flavor. If you can, use fresh herbs, vegetables, and spices.
  • Don't overcook the pasta: Overcooked pasta is mushy and bland. Cook the pasta according to the package directions, or until it is al dente (slightly firm to the bite).
  • Add the spice gradually: If you're not sure how much spice to add, start with a small amount and gradually increase it to your liking. You can always add more spice, but it's difficult to take it out.

Conclusion:

Spicy pasta dishes are a delicious and easy way to add some heat to your next meal. With a little creativity, you can create a spicy pasta dish that is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give one of these spicy pasta recipes a try!
