This is the acutal recipe (not a copycat) as posted on their website and as printed in the St. Louis Post Dispatch. THE REAL DEAL HERE MY FRIENDS (there are others posted on this website, but none of them are this exact recipe). This is so yummy and is a St. Louis tradition. This recipe serves 2, so feel free to double or triple it to feed your family. Serve as a main dish (as they do) with a Pasta House Salad on the side! It also makes a nice side dish to grilled chicken.

Time 1h5m

Number Of Ingredients 8

1/2 pound Shells, Penne, Rigatoni, Farfalle or other large Pasta
1 head Broccoli (steamed and cut into bite-sized pieces)
8 ounces fresh or one 8-ounce can sliced Mushrooms (sauteed in 1/2 stick of Butter)
1 cup shredded Parmesan Cheese
2 cups Half and Half
8 ounces homemade or store-bought Tomato Sauce
1 teaspoon Garlic Powder (to taste)
Salt and freshly ground Black Pepper (to taste)

Steps:

  • Preheat oven to 350°F.
  • Prepare pasta according to package instructions. Drain. Place in a large mixing bowl.
  • Add prepared broccoli, mushrooms Parmesan cheese, half and half tomato sauce and garlic powder. Mix well.
  • Taste. Add salt and pepper, to taste.
  • Pour mixture into a 9 x 13-inch baking pan. Cover the pan with foil.
  • Bake until sauce starts to thicken, about 20 minutes. The sauce will continue to thicken a little once it is out of the oven.
  • Serve hot.

Tips:

  • Choose the right pasta: Short pastas like penne, rigatoni, or fusilli are great choices for this dish. They hold the sauce well and are easy to eat.
  • Use fresh broccoli: Fresh broccoli has a better flavor and texture than frozen broccoli. If you're using frozen broccoli, be sure to thaw it completely before cooking.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender-crisp. Overcooked broccoli will be mushy and bland.
  • Use a good quality olive oil: Olive oil is a key ingredient in this dish. Use a good quality extra virgin olive oil for the best flavor.
  • Add some red pepper flakes: Red pepper flakes add a nice spice to this dish. If you don't like spicy food, you can omit them.
  • Garnish with Parmesan cheese: Parmesan cheese is the perfect finishing touch for this dish. It adds a salty, nutty flavor.

Conclusion:

Pasta con broccoli is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to get your kids to eat their vegetables. With a few simple ingredients and a little bit of time, you can create a meal that the whole family will enjoy.
