1/3 cup olive oil
2 tablespoons red wine vinegar
1 small shallot, minced
1 teaspoon dried oregano
8 ounces dried ziti
1 cup chopped cucumber
1/2 cup crumbled feta
1/4 cup chopped flat-leaf parsley
1/4 cup pitted Kalamata olives, chopped
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, oregano, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.

6 cups cooked pasta (any shape, I first made it with elbows, but have tried lots of different shapes and they all work fine), drained, rinsed and cooled
1/4 cup diced red onion
1/2 cup sliced pimento stuffed green olives(sliced black olives will do, but my family prefers the green in this dish)
1/4 tsp. liquid from olive jar
1 cup mayonaise
1 tbls. each of cider, white wine, red wine and tarragon vinegars
1/2 tsp. worcestershire sauce
1/4 tsp. yellow mustard
1 tsp. sugar
salt and pepper

Steps:

  • in a large bowl add pasta, onion, and olives. toss gently. in a seperate, smaller bowl mix remaining ingrdients thoroughly. pour mixture over pasta and mix gently. chill before serving.

3/4 cup extra virgin olive oil
1 cup cubed Mozzarella cheese

3 pickling cucumbers or kirbies, peeled and diced
2 bunches fresh oregano, leaves only, chopped
1/3 cup red wine vinegar
3 dashes hot sauce

Steps:

  • Bring 1 gallon salted water to a rolling boil in a large stockpot. Add 1 tablespoon olive oil, and pasta, and cook until al dente, about 6 to 8 minutes. Drain in a colander, shaking vigorously, and immediately transfer to an oiled cookie sheet or clean countertop to cool. When cool, transfer to a bowl, and toss with 1/4 cup extra virgin olive oil.

2 cups mayonnaise
2 (11 ounce) cans albacore tuna, drained
1 (6 ounce) can sliced black olives
4 stalks celery, chopped
½ medium white onion, chopped
kosher salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add cavatappi and cook, stirring occasionally, until tender yet firm to the bite, 9 to 10 minutes. Drain and run under cold water until no longer hot. Drain again and transfer to a big bowl.
