BROCCOLI PASTA SLAW

Broccoli Pasta Slaw image

This recipe appeared on Downhome with the Neelys on the Food Network channel. It looks delicious and I plan to make it for a Church potluck that is coming up; although, I will probably leave out the cayenne pepper. *Note - this recipe calls for broccoli slaw which can be purchased in the salad section of the supermarket.

Time 25m

Yield 3-5 serving(s)

Number Of Ingredients 10

8 ounces bow tie pasta, cooked and cooled
16 ounces broccoli (broccoli slaw, shredded)
1 cup almonds, slivered
1 cup cranberries, dried
1/2 cup yogurt, plain lowfat
1/4 cup mayonnaise, lowfat
3 tablespoons cider vinegar
1 tablespoon sugar
1/4 teaspoon cayenne pepper
salt and pepper, to taste

Steps:

  • Cook pasta in boiling, salted water until al dente. Cool.
  • Add pasta, broccoli slaw, almonds, and dried cranberries to a large bowl. In a separate bowl, whisk together the yogurt, mayonnaise, cider vinegar, sugar, cayenne, salt and pepper. Add the dressing to the broccoli and stir to combine. Check seasonings and adjust.

Tips:

  • Choose the right cabbage: For the best texture, use a firm head of green or red cabbage. Avoid using savoy cabbage, as it has a looser texture and will not hold up as well in the slaw.
  • Shred the cabbage thinly: This will help the slaw to absorb the dressing better and make it easier to eat.
  • Use a variety of vegetables: In addition to cabbage, you can add other vegetables to your slaw, such as carrots, celery, radishes, and onions. This will add flavor and texture to the dish.
  • Make your own dressing: A simple vinaigrette dressing is all you need for a delicious pasta slaw. You can use olive oil, vinegar, and a touch of sugar or honey to make a basic dressing. If you want a more flavorful dressing, you can add herbs, spices, or even a dollop of mayonnaise.
  • Let the slaw marinate: After you have combined the cabbage, vegetables, and dressing, let the slaw marinate for at least 30 minutes. This will allow the flavors to meld and the slaw to become more flavorful.
  • Serve chilled: Pasta slaw is best served chilled. You can chill it for at least 30 minutes before serving, or you can make it ahead of time and chill it overnight.

Conclusion:

Pasta slaw is a delicious and versatile dish that can be enjoyed as a side dish or a main course. It is easy to make and can be tailored to your own taste preferences. With so many different variations to choose from, you are sure to find a pasta slaw recipe that you will love.
