Pasta with anchovies and arugula is a classic Italian dish that is both simple to make and incredibly flavorful. The briny anchovies and peppery arugula perfectly complement the rich, nutty flavor of the pasta, while a simple garlic and olive oil sauce ties everything together. This dish is perfect for a quick and easy weeknight meal or a light lunch. It can also be served as a side dish or as an appetizer.

Here are our top 7 tried and tested recipes!

PASTA WITH ANCHOVIES AND ARUGULA

Pasta With Anchovies and Arugula image

The original version of this recipe, which I wrote in 2000 to accompany a column about the many wonders of anchovies, is one of the rare Minimalist recipes I wasn't entirely happy with when I re-examined it. The problem was the proportions of the ingredients. My thinking about pasta dishes has evolved, and the more-sauce-less-pasta approach that's emerged is one that's pretty brilliant, if I do say so myself. So, it was a bit of a shock to look back at my original recipe and find that, for four people, I called for a full pound of pasta but only two cups of arugula. The resulting dish is delicious, thanks to garlic and anchovies, but uniformly starchy and a bit lacking in textural and flavor contrast. You can barely even taste the arugula when there's only a half-cup in each serving. So I decided to do a little tweaking. My new version contains almost equal parts cooked pasta and raw arugula. Thanks to the increase in greenery, Pasta With Anchovies and Arugula 2.0 is lighter and more interesting than the original, though no less satisfying.

Time 30m

Yield 4 servings

Number Of Ingredients 7

Salt and fresh-ground black pepper
4 tablespoons extra virgin olive oil
4 large cloves garlic, peeled and slivered
8 anchovy fillets, or more to taste, with some of their oil
1/2 pound linguine or other long pasta
6 cups arugula, washed, dried and chopped
1/2 teaspoon or more crushed red pepper flake

Steps:

  • Set a large pot of water to a boil, and salt it.
  • Put half of the olive oil in a deep skillet, and turn the heat to medium. A minute later, add the garlic and the anchovies. When the garlic sizzles and the anchovies break up, turn the heat to its lowest setting.
  • Cook the pasta until it is tender but not mushy. Reserve 1 cup of the cooking liquid, and drain. Add pasta and arugula to skillet, along with enough of the reserved cooking water to make a sauce. Turn heat to medium, and stir for a minute. Add salt and pepper to taste, plus a pinch or more of red pepper flakes.
  • Turn pasta and sauce into a bowl, toss with remaining olive oil and serve.

1/2 cup mint leaves, roughly chopped or torn
1/2 cup walnuts, toasted and chopped

PASTA WITH GORGONZOLA AND ARUGULA

Pasta With Gorgonzola and Arugula image

The main characters here are Gorgonzola and arugula, the first of which appears in a number of different pasta sauces, all unsurpassed for their creaminess. But in many instances, to me at least, Gorgonzola-based sauces tend to be too slick and rich. This makes the addition of the fresh-tasting spicy arugula from the supermarket even more welcome. Not only does it provide a little bit of crunch, but its odd version of heat also gives a bit of an edge to what could otherwise be a soft, almost insipid sauce. Don't forget to finish up with a few hearty cranks of the pepper mill. A full teaspoon for the entire dish is not too much. (The original recipe called for 1/4 pound of Gorgonzola and 2 tablespoons of butter, but after many readers commented that the dish needed more sauce, we tested it and agreed. The figures you see below are for doubling the sauce, but if you prefer it the old way, just halve the Gorgonzola and butter.)

Time 30m

Yield 4 servings

Number Of Ingredients 5

4 tablespoons butter
1/2 pound ripe Gorgonzola
6 ounces arugula, washed and dried
1 pound cut pasta, like ziti or farfalle
Salt and pepper

Steps:

  • Bring a large pot of water to boil for pasta. Meanwhile, melt butter over low heat in a small saucepan. Add Gorgonzola and cook, stirring frequently, until cheese melts. Keep warm while you cook the pasta.
  • Tear arugula into bits, or use a scissors to cut it. Pieces should not be too small. Cook pasta until it is tender but not mushy. Remove and reserve a little cooking water, then drain pasta and toss it with arugula and cheese mixture, adding a bit of water if mixture seems dry.
  • Taste and add seasoning. Dish should take plenty of black pepper. Serve.

PASTA WITH ANCHOVIES AND ARUGULA

Pasta With Anchovies and Arugula image

Anchovies are a whole 'nother thing when they are sauteed, dissolve, and form part of a sauce! From Mark Bittman, published in the *New York Times* 7/29/11. Made it tonight with arugula and garlic from our garden. Had to skimp a little on the arugula, because it wouldn't all fit in our deep cast-iron pot, but it was absolutely delicious, and now I'm on the lookout for other recipes that call for anchovies!

SPAGHETTI WITH OLIVE OIL, GARLIC AND ANCHOVIES

Spaghetti with Olive Oil, Garlic and Anchovies image

Categories     Fish     Garlic     Pasta     Quick & Easy     Bon Appétit

Yield 2 servings; can be doubled or tripled

Number Of Ingredients 8

1/4 cup olive oil
4 large garlic cloves, minced
1 1 3/4- or 2-ounce can anchovy fillets, drained, chopped
8 ounces spaghetti
1 teaspoon fresh lemon juice
Freshly ground pepper
Chopped fresh Italian parsley
Freshly grated Parmesan cheese (optional)

Steps:

  • Heat oil in heavy small skillet over low heat. Add garlic and cook 2 minutes. Add anchovies and cook until garlic just begins to color, 3 minutes.
  • Meanwhile, cook spaghetti in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return spaghetti to pot. Add oil mixture and lemon juice and toss to coat. Season with pepper. Divide between plates. Sprinkle generously with parsley. Serve, passing Parmesan separately if desired.

Tips:

  • Choose the freshest anchovies you can find. Fresh anchovies will have a bright silvery color and a firm texture.
  • Don't overcook the anchovies. Overcooked anchovies will become tough and chewy. Cook them just until they are opaque, about 1-2 minutes.
  • Use a good quality olive oil. The olive oil will help to bring out the flavor of the anchovies and other ingredients.
  • Add the arugula at the very end of cooking. Arugula wilts quickly, so you don't want to cook it for too long.
  • Serve the pasta immediately. Pasta is best served hot, so don't let it sit around for too long before eating.

Conclusion:

Pasta with anchovies and arugula is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The anchovies add a salty, briny flavor to the pasta, while the arugula adds a peppery, fresh flavor. This dish is sure to please everyone at the table.
