8 ounces uncooked angel hair pasta
1/4 cup butter, cubed
2 cups sliced fresh mushrooms
1/3 cup chopped onion
4 teaspoons all-purpose flour
1-1/4 cups chicken broth
1/3 cup white wine or chicken broth
4 teaspoons Dijon mustard
1-1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
1/2 teaspoon paprika
1/4 teaspoon pepper
1 pound uncooked medium shrimp, peeled and deveined
1/3 cup heavy whipping cream
1/4 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain., Meanwhile, in a large skillet, heat butter over medium-high heat. Add mushrooms and onion; cook and stir until tender. Stir in flour until blended; gradually stir in broth, wine, mustard, tarragon, paprika and pepper. Cook and stir 5 minutes or until sauce is thickened., Reduce heat to medium; stir in shrimp and cream. Cook, covered, 2-3 minutes or until shrimp turn pink. Serve with pasta; sprinkle with cheese.

300g farfalle or other pasta shape
3 tbsp reduced-fat mayonnaise (use full-fat if you prefer)
1 heaped tsp wholegrain mustard
1 tsp clear honey
300g cooked chicken , torn into rough pieces
4 spring onions , thinly sliced (or use ½ red onion, thinly sliced)
small bunch basil , leaves roughly torn
4 tomatoes , quartered, then each chunk halved

Steps:

  • Boil the pasta, then cool under running water. Mix the mayo, mustard and honey in a large bowl and loosen with a little water to make a dressing the consistency of double cream. Add the pasta, chicken, onions, basil and tomatoes, season to taste, then gently mix together.

A cream sauce made with both Dijon and grainy mustards is my idea of awesome. This easy, one-skillet chicken dish is ready in 30 minutes and has a perfectly tangy bite from the mustards that's mellowed by the cream. Along with cream and chicken broth, there's chardonnay in the sauce. I haven't experimented without using wine because it adds so much depth of flavor. The alcohol burns off during cooking and what remains is a richness of flavor imparted by the wine. And since Dijon mustard is made with white wine, everything in the sauce blends and layers beautifully.

8 ounces pasta, cooked according to package directions (I used tagliatelle)
1.25 to 1.50 pounds thin-sliced boneless skinless chicken breasts
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
3 to 4 garlic cloves, peeled and finely minced or pressed with a garlic press
1 cup dry white wine (I used chardonnay; brandy may by substituted)
1/4 cup low-sodium chicken broth
1 heaping tablespoon Dijon mustard
1 heaping tablespoon grainy brown mustard (I used a spicy grainy brown)
1/2 cup heavy cream
salt and pepper, to taste
1/2 to 1 teaspoon granulated sugar, optional and to taste
2 tablespoons fresh Italian flat-leaf parsley, finely minced for garnishing

Steps:

  • Cook pasta according to package directions. Drain and set aside. While pasta cooks, start cooking the chicken.
  • To a large skillet add the olive oil, chicken, and evenly season with 1/2 teaspoon salt, 1/2 teaspoon pepper, and sauté over medium-high heat for about 6 to 8 minutes, or until chicken is cooked through; flip midway through cooking. If all the chicken doesn't fit in the pan, cook in batches. Remove chicken from pan (keep the oil and cooking juices from the chicken in the pan), place on a plate, and set aside.
  • Add the garlic and sauté for 1 minute. Stir intermittently.
  • Remove skillet from the heat and add the wine and chicken broth. It will bubble vigorously so use caution. Return the pan to the heat and cook until liquid has reduced by half, about 5 minutes.
  • Add the mustards and stir to combine.
  • Turn the heat to low and add the cream, stirring to combine. Simmer for about 5 minutes to allow sauce to reduce and thicken.
  • Taste sauce and add salt and pepper to taste. Optionally add sugar to taste. The wine I used was quite dry and the spicy grainy brown mustard was quite spicy and I needed a pinch of sugar to balance the flavors.
  • Add the chicken back to the skillet and cook over low heat for about 5 minutes, or until chicken is warmed through, and sauce thickens a bit more. It doesn't become 'thick' but by reducing, it thickens a bit. Flip chicken midway through cooking or spoon sauce over the chicken to ensure all sides are evenly coated with sauce.
  • Evenly sprinkle with parsley and serve immediately with pasta. I had plenty of extra sauce and spooned it over the pasta. Chicken is best warm and fresh but will keep airtight in the fridge for up to 5 days. Reheat very gently so the sauce doesn't break.

4 boneless skinless chicken breasts (1 1/2 - 2 pounds total)
1/4 teaspoon kosher salt
1/8 teaspoon coarse ground black pepper
1 tablespoon oil ((vegetable, canola or grapeseed))
1 medium shallot, finely diced
1 teaspoon finely chopped fresh rosemary
1 large clove garlic, minced (about a teaspoon)
1 tablespoon all-purpose flour
1/2 cup dry white wine ( (not sweet wine))
3 tablespoons grainy Dijon mustard
1 cup unsalted or reduced sodium chicken stock
1/2 cup heavy cream
Optional: fresh chives or parsley for garnish

Steps:

  • Preheat oven to 400ºF.
  • Trim chicken and sprinkle both sides with salt and pepper.
  • Add oil to a large oven safe skillet over medium heat. When oil is hot, place chicken in skillet. Cook for 3-4 minutes or until golden brown and it removes easily from the pan (it shouldn't stick). Flip each piece over and cook for another 3-4 minutes.
  • Place the pan in the oven and bake for 10 minutes or until the internal temperature of the chicken breasts reaches 165ºF when checked with an instant-read thermometer in the thickest portion of the meat.
  • Remove chicken from the pan and place it on a plate. Cover with foil.
  • Return pan to burner over medium heat.
  • Add shallots and cook for 3-4 minutes or until softened. Add rosemary and garlic and cook, stirring constantly, for 1 minute or until garlic is fragrant. Stir in flour and cook for 1 minute, stirring constantly.
  • Whisk or stir in wine while scraping all the brown bits off the bottom of the pan. Continue to cook for 1-2 minutes or until slightly reduced.
  • Add mustard while whisking, and then add chicken broth while whisking.
  • Cook for 5-6 minutes or until thickened slightly. Whisk in cream and cook for 5 minutes, stirring frequently, or until thickened. Return chicken to pan to coat in sauce (or drizzle sauce over chicken) and serve immediately, garnished with fresh parsley or chives if desired.

1 cup dry white wine
1/2 teaspoon lemon, zest of, grated
8 ounces bay scallops
2 teaspoons Dijon mustard
1/4 cup low-fat butter (40%)
6 ounces pasta, cooked and hot
1/4 cup chives, snipped
salt and pepper

Steps:

  • Simmer wine and lemon zest in medium saucepan.
  • Add scallops and cook and stir for 1 minute.
  • Take out scallops, raise heat and reduce wine to about 1/4 cup.
  • Reduce heat to low, whisk in mustard, then butter, in small pieces.
  • Add scallops and any juice and heat through.
  • Season with salt and pepper.
