Our version of pasta with sardines combines linguine with garlic-toasted breadcrumbs, sautéed sweet onions, fresh lemon, parsley, and capers.

6 ounces spaghetti or linguine
1 4.25 ounce tin boneless, skinless sardines in olive oil
2 cloves garlic (minced)
3/4 cup homemade breadcrumbs (see recipe notes)
Salt and freshly ground black pepper
2 tablespoons olive oil
1 medium sweet onion (chopped)
1 teaspoon fresh lemon zest
1/4 cup chopped fresh parsley
1/4 teaspoon crushed red pepper (optional)
2 tablespoons capers (drained (optional))
Lemon wedges for serving

Steps:

  • Put a pot of salted water on to boil for the pasta.
  • Open the sardines, drain the olive oil into a frying pan, and set the sardines aside.
  • Heat the oil over medium heat, add the garlic and sauté until fragrant, 1 minute.
  • Add the breadcrumbs (see below), season lightly with salt and pepper and continue cooking, stirring constantly, until the crumbs are lightly toasted and crisp, 2 to 4 minutes. Transfer the crumbs to a plate and set aside.
  • Return the pan to the stove and add the 2 tablespoons of olive oil. Add the onion, season with salt and pepper, and sauté until soft and lightly caramelized, 5 to 7 minutes.
  • Add the sardines, break them apart gently and cook just long enough to heat through, 2 minutes.
  • Stir in the lemon zest, parsley, crushed red pepper, and capers. Remove from the heat and cover to keep warm.
  • Cook the pasta according to package directions, reserve 1/2 cup of the cooking liquid, then drain and return to the pan.
  • Add the sardine mixture along with half of the reserved cooking liquid to the pasta. Toss to combine, adjust the seasoning and add a little more liquid if needed.
  • Add the garlic-toasted breadcrumbs, toss again and serve immediately.
  • Note: This recipe can easily be doubled.

2 cups whole wheat pasta (I used rotini)
olive oil
1 1/2 tablespoons butter
1 cup chicken stock
juice of half a lemon
1/2 teaspoon prepared horseradish
1/2 roasted red pepper
1 garlic clove
2 tablespoons chopped black olives
1 teaspoon Worcestershire sauce
1 (8 ounce) can sardines, bones removed

Steps:

  • Bring a pot of water to a boil, add 1 tbsp olive oil. Once boiling add pasta and cook to desired doneness.
  • In a medium sized skillet melt the butter on medium heat. Once melted add chicken stock.
  • Slice roasted red pepper into strips and chop the clove of garlic.
  • Add horseradish to the pan and mix. Let the liquid reduce slightly and add remaining ingredients. Simmer the sauce until reduced a little more.
  • Once pasta has cooked, drain and add a little olive oil so as not to stick.
  • Add pasta to the sauce, take off the heat and mix to coat.

1 pound pasta of your choice (I prefer short ones like rigatoni, penne, etc.)
1 tablespoon extra-virgin olive oil
2 tablespoons butter
3 cloves garlic, minced
1/2 large onion, finely diced
One 16-ounce jar roasted red peppers, drained and roughly chopped
1 cup vegetable or chicken broth
1/4 cup heavy cream
2 tablespoons finely minced fresh parsley, plus more for serving
Several leaves fresh basil, chopped, plus more for serving
1/2 cup Parmesan shavings, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions.
  • Meanwhile, add the oil and butter to a large skillet over medium-high heat and melt the butter. Add the garlic and onions and saute until starting to soften, 2 to 3 minutes. Add the chopped red peppers and cook until hot, 2 to 3 minutes.
  • Carefully transfer the contents of the skillet to a food processor or blender. Put on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers).
  • Pour the pepper puree back into the skillet. Add the broth, 1/2 teaspoon salt and some pepper, and stir until heated. Splash in the cream and stir to combine. Add the parsley and basil and stir to combine. Taste and adjust the seasoning if you need to.
  • Drain the pasta and add it to the skillet. Add the Parmesan, and then stir it together to coat the pasta.
  • Serve in bowls with extra Parmesan and a sprinkling of parsley and basil on top.

2 tablespoons olive oil
1 medium yellow onion, chopped

400g spaghetti
1 tbsp olive oil
2 garlic cloves , crushed
pinch chilli flakes
227g can chopped tomato
x cans skinless and boneless sardines in tomato sauce
100g pitted black olives , roughly chopped
1 tbsp capers , drained
small handful parsley , chopped

Steps:

  • Cook the spaghetti in a large pan of boiling salted water according to pack instructions. Meanwhile, make the sauce. Heat the oil in a medium pan and cook the garlic for 1 min. Add the chilli flakes, tomatoes and sardines, breaking up roughly with a wooden spoon. Heat for 2-3 mins, then stir in the olives, capers and most of the parsley. Mix well to combine.
  • Drain the pasta, reserving a couple of tbsp of the water. Add the pasta to the sauce and mix well, adding the reserved water if the sauce is a little thick. Divide between 4 bowls and sprinkle with the remaining parsley.

2 tablespoons olive oil
4 garlic cloves, chopped
1 1/2 cups dry white wine
2/3 cup chopped Italian parsley

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite.
  • Meanwhile, heat 1 tablespoon oil reserved from sardines and olive oil in heavy large skillet over medium heat. Add garlic and sauté 1 minute. Add wine; increase heat and boil until liquid is reduced by half, stirring occasionally, about 6 minutes. Remove skillet from heat. Mix parsley into wine sauce. Pour 1/3 cup sauce into small bowl and reserve.
  • Drain pasta. Add to skillet and toss over low heat to coat with sauce. Season pasta to taste with salt and pepper.
  • Divide pasta between 2 plates. Top with sardines and reserved 1/3 cup sauce. Serve with lemon wedges.

Sweet and savory flavors mingle beautifully here, with currants, raisins, saffron and pine nuts. Aromatic wild fennel fronds and fresh sardines are preferred, but even if made with cultivated fennel and canned sardines, this is a magnificent dish.

1 cup coarse dry bread crumbs
Extra-virgin olive oil
Salt and pepper
Pinch of sugar
2 ounces fresh bushy fennel fronds, wild or cultivated, about 1 large handful
1/2 cup golden raisins
1/2 cup currants
1/2 cup white wine
1/2 teaspoon crumbled saffron
1 large onion, diced (about 2 cups)
2 small fennel bulbs, diced
4 anchovy fillets, roughly chopped
1/2 teaspoon fennel seeds, ground
1/2 teaspoon coriander seeds, ground
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
6 very fresh sardines (about 1 pound), cleaned and filleted (you will have about 6 ounces fillets; see note), or substitute large best-quality canned sardines, drained
1 pound bucatini or thick spaghetti
1/4 cup lightly toasted pine nuts
2 tablespoons chopped parsley
Lemon wedges, for garnish

Steps:

  • In a small skillet, toast bread crumbs in 2 tablespoons olive oil until golden. Season with salt and pepper and a pinch of sugar. Set aside.
  • Simmer the fennel fronds in a large pot of salted water until tender, about 10 minutes. Remove and spread out on a platter to cool. Do not discard cooking water. When fronds are cool, chop finely with a large knife (or pulse in a food processor with a little of the cooking water).
  • Put raisins and currants in a bowl and cover with the white wine and 1/2 cup hot fennel-cooking water. Add crumbled saffron and let ingredients steep together for 10 minutes.
  • In a large skillet, stew the onions and diced fennel in 6 tablespoons olive oil over medium heat until softened, about 10 minutes. Season generously with salt and pepper. Add anchovies, ground fennel and coriander seeds, garlic and red pepper flakes and cook for 2 minutes more. Stir in reserved fennel fronds. Add the raisin mixture and its liquid and bring to a simmer.
  • Season the fresh sardine fillets with salt and pepper and lay them on top of the onion mixture. Put a lid on the pan and turn off the heat for about 5 minutes, so sardines cook through and are just done. Stir to distribute chunks of fish throughout mixture. (If using canned sardines, skip this step and simply stir them in.)
  • Boil the bucatini in the fennel cooking water (add more water to the pot if necessary). Cook until noodles are on the firm side of al dente, then drain, reserving 1 cup of pasta water. Add pasta to pan with onion-sardine mixture, sprinkle pasta lightly with salt and gently toss together, adding a little pasta water to keep everything well moistened. Taste and correct seasoning; it should be well seasoned.
  • Transfer to a large platter or wide pasta bowl. Sprinkle with bread crumbs, pine nuts and parsley. Garnish with lemon wedges. Add a drizzle of olive oil, if desired.

Years ago, I stayed with an Italian friend in Bologna who worked long hours at his job. By the time he got home, he was hungry, so he'd start water boiling and cast about his tiny kitchen to see what he could use for dinner. Then, to my fascination, he'd whip up a delicious pasta sauce from almost nothing: a few anchovies and some walnuts, or a can of tuna and another of beans. Yesterday's bread became today's bread crumbs, browned in olive oil with garlic and tossed with spaghetti, olives, capers and jarred tomato purée. I try to keep a jar of roasted peppers handy at all times. They're useful for panini, pizzas and especially pastas like this one. Spanish piquillo peppers are particularly sweet, but bell peppers will do as well. If you have basil, it's delicious in this dish - but not required.
