PHILLY CHEESESTEAKS

Philly Cheesesteaks image

For Philadelphians, there's no hotter debate than who serves the best cheesesteak: Pat's King of Steaks or Geno's Steaks. By most accounts, Pat Olivieri invented the sandwich of thinly sliced beef and onions in the 1930s; the cheese came along a decade later. Geno's opened a few feet from Pat's in 1966 with an almost identical menu, and the rivalry began. Today, Pat's sandwiches have chopped steak; Geno's have sliced.

Time 20m

Yield 4 Philly cheesesteak sandwiches

Number Of Ingredients 8

2 tablespoons extra-virgin olive oil
1 onion, thinly sliced
Kosher salt and freshly ground pepper
1 pound shaved beef
Hot sauce, to taste
Worcestershire sauce, to taste
4 hoagie or hero rolls, split
Sliced cherry peppers and American cheese, for topping

Steps:

  • Preheat the broiler. Heat the olive oil in a large skillet over medium heat. Add the onion and cook, stirring, until golden, about 4 minutes; season with salt and pepper. Remove the onion to a plate. Add the beef to the skillet and cook, stirring, until just starting to brown, about 8 minutes. Add a few dashes each of hot sauce and Worcestershire sauce and toss to coat.
  • Pile the beef and onion onto the rolls and top with cherry peppers and cheese. Place on a baking sheet and broil (open-face) until the cheese melts.

Tips:

  • Choose the right bread: Fresh, high-quality bread is essential for a great Philly Cheesesteak. Look for a long, crusty loaf of Italian bread or a soft, chewy hoagie roll.
  • Use quality cheese: Provolone or Cheez Whiz are the classic choices for Philly Cheesesteak cheese, but you can use any type of cheese that melts well.
  • Slice the steak thinly: The steak should be sliced thinly against the grain so that it cooks quickly and evenly.
  • Cook the steak in a hot pan: Use a well-seasoned cast iron skillet or griddle to cook the steak. Make sure the pan is hot before adding the steak, and cook it over high heat for a few minutes per side, or until cooked to your desired doneness.
  • Add the cheese and toppings: Once the steak is cooked, add the cheese and your favorite toppings. Some popular choices include grilled onions, peppers, mushrooms, and hot sauce.
  • Serve immediately: Philly Cheesesteaks are best served hot and fresh.

    Conclusion:

With its combination of tender steak, melted cheese, and flavorful toppings, the Philly Cheesesteak is a sandwich that has stood the test of time. Whether you're a local Philadelphian or just a fan of great sandwiches, you're sure to enjoy this iconic dish. So next time you're looking for a quick and easy meal, give the Philly Cheesesteak a try. You won't be disappointed.
