SPICY AND TANGY HOT WINGS

Spicy and Tangy Hot Wings image

This is my wing recipe that I've tweaked over the last 10 years to suit my specific tastes. If you don't like vinegar and cayenne; these wings will not be for you. I've never seen a middle ground with this recipe; they are either raved about or politely passed up. If you like a hotter wing experience, double the amounts of chili powder and cayenne powder. Enjoy with chunky blue cheese or ranch dressing.

¼ cup red wine vinegar
¼ cup malt vinegar

2 teaspoons hot pepper sauce
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon ground black pepper

Categories     Lunch/Snacks

Time 45m

Yield 30 Wings, 4-6 serving(s)

Number Of Ingredients 11

2 teaspoons neely's dry rub seasonings
2 teaspoons kosher salt
1/4 teaspoon cayenne pepper
30 chicken wings, cut at joint, washed and dried
1 -2 tablespoon lemon-pepper seasoning
4 tablespoons salted butter
1 minced garlic clove
1/2 cup hot sauce (recommend ( Texas Pete's)
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1/4 teaspoon Worcestershire sauce

Steps:

  • For the seasoning:.
  • Mix the dry rub, salt, and cayenne together in a small bowl.
  • Preheat deep-fryer with peanut oil to 350 degrees F.
  • For the wings:.
  • Add the wings to a large mixing bowl and season with the lemon-pepper seasoning and toss to coat. Allow to sit for a few minutes, so flavors can permeate into the chicken.
  • Add the wings to the deep-fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You may need to do this in batches.
  • Meanwhile, while wings are frying, melt butter in small saucepan over medium-low heat with the garlic. Transfer to a large bowl and whisk in the hot sauce, brown sugar, vinegar, and Worcestershire sauce until combined.
  • Remove wings from fryer and drain on a paper towel lined sheet tray. Immediately sprinkle with the seasoning.
  • Add fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Serve immediately after tossing the wings with the sauce. Serve with the blue cheese dipping sauce and celery and carrot sticks.

Tips:

  • Choose the right peaches: Use ripe, firm peaches that are not too soft or bruised. Freestone peaches are easiest to work with, as they have a pit that easily separates from the flesh.
  • Make sure your wings are crispy: The key to great hot wings is crispy skin. To achieve this, make sure your wings are dry before you cook them. You can pat them dry with paper towels or let them air dry for a few minutes.
  • Don't overcrowd the pan: When cooking the wings, don't overcrowd the pan. This will cause them to steam instead of fry, resulting in soggy wings.
  • Use a good quality hot sauce: The hot sauce is what gives these wings their flavor, so make sure you use a good one. Look for a hot sauce that has a good balance of heat and flavor.
  • Serve with your favorite dipping sauce: Hot wings are typically served with a dipping sauce. Some popular choices include ranch dressing, blue cheese dressing, and celery sticks.

Conclusion:

These spicy peach hot wings are the perfect game day snack or party appetizer. They're easy to make and always a hit with a crowd. The combination of sweet and spicy is irresistible, and the crispy skin is sure to please everyone. So next time you're looking for a delicious and unique appetizer, give these spicy peach hot wings a try.
