REAL SIMPLE'S SPRING PEA SALAD

Real Simple's Spring Pea Salad image

From the June 2006 issue of Real Simple magazine. My friend, Shelly, was raving about an excellent pea salad that she had prepared. (It had even earned the approval of Mean Chef. LOL) While flipping through my issue of the magazine one evening, I discovered this recipe and thought that it sounded wonderful. It was amusing to learn that THIS was the pea salad that had impressed her. It is a fresh change from the usual mayo-laden pea salads.

WES' SUPER AWESOME PEA SALAD

Wes' Super Awesome Pea Salad image

I got this recipe from my buddy Wes which was a dish that his grandmother always made. People are sometimes afraid to try this 'cause the ingredients may seem strange, but I'm telling you, it's AWESOME! And once they try it they can't get enough. Also, don't be afraid of the canned peas, they really do work better than fresh or frozen. This recipe can easily be doubled or tripled for larger groups. I hope you enjoy!

Categories     Vegetable

Time 10m

Yield 4 serving(s)

Number Of Ingredients 6

1 (15 ounce) can peas, chilled
1/3 cup red onion, finely diced
1/3 cup English cucumber, finely diced
3 tablespoons mayonnaise
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)

Steps:

  • Place cans of peas in fridge to chill for a couple of hours, this will help them to set up and not turn to mush when mixing.
  • Dice red onion and cucumber about the same size as the peas.
  • Mix all ingredients together in a bowl. You may want to taste it to make sure there is a good amount of salt and pepper.
  • This can be served right away or left to sit for a couple hours. It tends to get runny if left to sit too long though.

PEA SALAD

Pea Salad image

Peas straight from the freezer retain their crisp exterior and soft, creamy interior in this simple-to-make salad. For a subtler onion flavor, soak onion slices in cool water, then thoroughly drain before folding into the mayonnaise mixture.

Provided by Martha Stewart

Categories     Pork Recipes

Time 4h25m

Yield Makes 4 cups

Number Of Ingredients 9

1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon white wine vinegar
Coarse salt and freshly ground pepper
1 pound frozen peas (do not thaw)
1/2 small red onion, halved lengthwise and thinly sliced (1/2 cup)
1/4 cup packed fresh flat-leaf parsley leaves
4 ounces bacon (about 4 slices), chopped
2 ounces aged white cheddar, shaved or coarsely grated

Steps:

  • Whisk together mayonnaise, sour cream, and vinegar in a large bowl; season generously with salt and pepper. Fold in peas, onion, and parsley. Refrigerate at least 4 hours.
  • Meanwhile, cook bacon in a large skillet over medium heat until browned and fat is rendered, 8 to 10 minutes. Transfer to paper towels to drain and crisp.
  • Let salad stand at room temperature for 10 minutes. Gently fold in cheddar and bacon just before serving.

Tips:

  • Fresh ingredients: Use the freshest peas possible for the best flavor. Freshly shelled peas are ideal, but frozen peas can also be used if fresh peas are not available.
  • Blanch the peas: Blanching the peas in boiling water helps to preserve their color and crispness.
  • Use a variety of textures: Add some crunchy vegetables, such as celery or red onion, to the salad for a contrast in texture.
  • Use a flavorful dressing: The dressing is what really brings the salad together, so make sure it's flavorful and well-balanced. A simple vinaigrette or a creamy dressing made with mayonnaise or yogurt are both good options.
  • Serve the salad chilled: Pea salad is best served chilled, so make sure to refrigerate it for at least an hour before serving.

Conclusion:

Pea salad is a refreshing and delicious side dish that can be enjoyed all summer long. It's easy to make, and it's a great way to use up fresh peas. With its vibrant colors and delightful flavors, pea salad is sure to be a hit at your next potluck or picnic.
