1/2 cup sugar
1/2 teaspoon baking powder

1 large egg, beaten
8 ounces cream cheese, softened
2 tablespoons sugar
1 teaspoon vanilla
1 large egg, room temperature
1 teaspoon lemon juice
1 tablespoon all-purpose flour
1/8 teaspoon salt
2 -3 peaches, peeled and sliced thin
1 tablespoon icing sugar (or more)

1 cup graham cracker crumbs
3/4 cup rolled oats
1/4 teaspoon cinnamon
2 tablespoons sugar

CHEESECAKE FILLING:
8 ounces cream cheese
1/4 cup white sugar
1/2 cup heavy whipping cream
PEACH TOPPING:
3 cups fresh peaches, diced (See Note 1)
3 tablespoons lemon juice
3 tablespoons water
2 tablespoons sugar
1 tablespoon cornstarch

  • Add filling ingredients to sauce pan and heat over medium low heat until soft about 6 minutes. Stir to prevent sticking. Set aside and allow to cool.
