3/4 cup Yoplait® plain fat-free yogurt
2 egg whites
1/4 cup sugar
1/4 cup honey
1/4 cup canola oil
1 cup fresh or Cascadian Farm™ frozen blueberries
1/2 cup chopped fresh peach or Cascadian Farm™ frozen unsweetened peach slices, thawed, drained, and chopped
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 350° F. Lightly coat an 8 x 8 x 2-inch baking pan with nonstick cooking spray; set aside. In a large bowl stir together the 1 cup flour, the cornmeal, lemon peel, baking powder, baking soda, and salt. Make a well in the center of the flour mixture; set aside.
  • In medium bowl combine yogurt, egg whites, sugar, honey, and oil. Add yogurt mixture all at once to flour mixture; stir just until combined. In small bowl combine blueberries, peach, and the 1 tablespoon flour; toss gently to coat.
  • Spread about half the batter in the prepared baking pan. Sprinkle with the fruit mixture. Spoon mounds of the remaining batter over the fruit mixture, then spread evenly over fruit (the batter may not completely cover the fruit).
  • Bake about 40 minutes or until coffee cake is golden brown and a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 30 minutes. Serve warm.

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
4 tablespoons unsalted butter, melted
1/2 cup milk
1 1/2 teaspoons vanilla extract
1 teaspoon almond extract
2 peaches, 1 lb. total, peeled, pitted and sliced 1 inch thick

Steps:

  • Preheat an oven to 350°F Grease and flour a 9-inch round springform pan or square baking pan or baking dish (see Note).
  • To make the streusel, in a bowl, stir together the flour, brown and granulated sugars and cinnamon. Add the butter and, using a pastry blender or your fingers, cut or rub in the butter until coarse crumbs form. Set aside.
  • To make the cake, in a bowl, stir together the flour, granulated sugar, baking powder and salt. In another bowl, using an electric mixer on medium speed or a wire whisk, beat the egg, melted butter, milk, vanilla and almond extract until creamy, about 1 minute. Add to the flour mixture and beat just until evenly moistened. There should be no lumps or dry spots. Do not overmix.
  • Spoon the batter into the prepared pan and spread evenly. If using a springform pan, arrange the peach slices in concentric circles from the pan sides to the center. If using a square pan, arrange the slices in rows. Gently press the slices into the batter. Sprinkle evenly with the streusel.
  • Bake until the topping is golden brown and a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Transfer the pan to a wire rack and let cool for 20 minutes. Remove the sides of the springform pan, if using. Serve the cake warm or at room temperature, cut into wedges or squares. Makes one 9-inch cake.
  • Note: If using a glass baking dish, reduce the oven temperature to 325°F.

1 (1/4 ounce) package active dry yeast
3/4 cup warm water
3 tablespoons sugar
1 teaspoon salt
1 large egg
1/4 cup margarine, softened
2 cups all-purpose flour
1 (16 ounce) can peach slices, drained (reserving 1 tablespoon plus 1 teaspoon syrup)
1/4 cup all-purpose flour
1/4 cup brown sugar
1/4 cup margarine, cold
1 teaspoon cinnamon
1/4 cup pecans, chopped (optional)
1/2 cup powdered sugar (for glaze)

Steps:

  • Make streusel; in a small bowl mix flour, brown sugar and cinnamon, cut in margarine until it resembles crumbs, add pecans if desired. Cover and chill while making the cake.
  • Dissolve yeast in warm water in large mixer bowl. Add sugar, salt, egg, margarine and 1 1/4 cup of the flour. Beat on medium speed, scraping bowl frequently, for 2 minutes. Stir in remaining flour.
  • Drop half of the batter by tablespoonfuls into a greased 8x8x2 or 9x9x2 inches square pan, spreading batter to edges; arrange drained peaches over batter, sprinke half of the streusel over the peaches/batter. Drop the remaining batter by tablespoonfuls into pan evenly, sprinkle with remaining streusel. Cover, let rise in a warm place until double, about an hour.
  • Heat oven to 350°, uncover and bake until golden brown, 30 - 35 minutes, cool in pan on wire rack or loosen coffee cake, remove from pan to wire rack and let cool.
  • Mix the reserved 1 tablespoon and 1 teaspoon syrup from the peaches with 1/2 cup powdered sugar into a glaze, drizzle over coffee cake while still warm.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm whole milk (110° to 115°)
1/2 cup butter, softened
1/2 cup sugar
2 teaspoons salt
3 large eggs
5 to 5-1/2 cups all-purpose flour
FILLING:
1/4 cup butter, melted
1-1/2 cups peach preserves
1 cup chopped pecans
2/3 cup sugar
2 teaspoons ground cinnamon
GLAZE:
1-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
2 to 3 tablespoons whole milk

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, salt, eggs and 2 cups flour; beat on low speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down, Turn onto a lightly floured surface; divide in half. Roll each portion into a 20x10-in. rectangle. Spread with butter; top with preserves and pecans. Combine sugar and cinnamon; sprinkle over the top. , Roll up jelly-roll style, starting at a long end. Pinch seams to seal and tuck ends under. Place seam side down on a greased baking sheet, curving ends to make a "U" shape. With scissors, make cuts every 1-1/2 in., Cover and let rise in a warm place for 45 minutes. Bake at 350° for 25-30 minutes or until golden brown. Remove from pans to wire racks. Combine the glaze ingredients; drizzle over warm coffee cakes. Cool.

This is an old recipe I got when I was in 4-H. It is a rich yeast raised coffee cake that won a blue ribbon at the county fair. Prep Time includes time for the dough to rise.

YEAST DOUGH:
1 Tbsp active dry yeast
1 Tbsp sugar
1/2 c warm water (110° to 115°)
1/3 c shortening, melted and cooled to lukewarm
1/2 c sugar
1 egg, beaten
3 1/2-4 cups all-purpose flour, divided
1/2 c warm milk (80°-90°
TOPPING:
1 c flour
1/2 c packed brown sugar
1/2 c sugar
1/4 c shortening
2 tsp vanilla
1 pinch of salt
2 can(s) (15-1/4 ounces each) sliced peaches, drained

Steps:

  • 1. For yeast dough, dissolve yeast and 1 tablespoon sugar in water. Let stand 5 minutes. In a large bowl, combine shortening, sugar and egg. Gradually mix in 2 cups flour, milk and yeast mixture. Add enough remaining flour to form a soft dough. Turn out onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, turning to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
  • 2. Punch dough down. Divide in half and press each half into a greased 11 by 7 inch baking pan. Cover and let rise until doubled, about 1 hour. Combine all topping ingredients except peaches. Sprinkle over dough. Top with peach slices. Bake at 375 for 25-30 minutes or until golden brown. Yield: 2 coffee cakes.

1 c plus 2 tbs.softened butter, divided
3 large eggs
3 1/4 c all purpose flour, divided

1/4 c chopped pecans
1/4 tsp nutmeg

  • 1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking pan with cooking spray, set aside. In a large bowl, with an electric beater on medium speed, beat 1-1/2 cups sugar and 1 cup butter until creamy. Beat in eggs one at a time, mixing well after each addition. Add 3 cups flour, the baking powder, and vanilla; beat well. Spread half of the batter in prepared baking pan. Spoon pie filling evenly over cake batter, leaving a 1/2-inch border around edge. Drop remaining batter by tablespoonfuls over pie filling. Using a wet knife, carefully spread batter over pie filling, covering filling completely. In a small bowl, combine remaining 1/4 cup sugar, 1/4 cup flour, 2 tablespoons butter, the pecans, and nutmeg until well mixed and crumbly. Sprinkle evenly over top of cake. Bake 55 to 60 minutes, or until a toothpick inserted in center comes out clean. Allow to cool then cut and serve, or cover until ready to serve.

Tips:

  • Use fresh or frozen peaches for the best flavor. If using frozen peaches, thaw them completely before using.
  • To easily remove the skin from peaches, score an "X" on the bottom of each peach and place them in boiling water for 30 seconds. Remove from water and immediately transfer to a bowl of ice water. The skins will slip right off.
  • Gently fold dry ingredients into wet ingredients until just combined. Over-mixing will result in a tough cake.
  • For a streusel topping, combine 1/2 cup flour, 1/2 cup brown sugar, and 1/2 cup chopped nuts. Sprinkle over batter before baking.
  • Serve coffee cake warm or at room temperature. It can be stored in an airtight container at room temperature for up to 3 days.
