PEACH GLAZED HAM

Peach Glazed Ham image

This is definitely a unique ham you should try this year for Easter dinner. The sweet peach glaze is a nice contrast to the smokiness of the ham. The cloves add an aromatic taste to the sauce and provide another depth of flavor. The peaches dotted all over really makes for a beautiful presentation.

Provided by Danyal Vierheller

Categories     Pork

Time 3h15m

Number Of Ingredients 8

1 (7- to 8-lb) fully cooked bone-in shank-end ham
6 c water
1/4 c maple syrup
1 c light brown sugar, packed
1 tsp dry mustard
1/2 tsp ground cloves
1 can(s) peaches in light syrup, 15 oz.
1 c peach preserves, warmed

Steps:

  • 1. Put ham cut side down in a large deep heavy pot (about 10 quarts) and add water and syrup. Bring liquid to a boil, then reduce heat to low and gently simmer ham, covered, until tender, 2 to 2 1/2 hours. Uncover and cool slightly.
  • 2. Preheat oven to 350°F.
  • 3. When ham is cool enough to handle, remove from pot, reserving cooking liquid. Then cut off any rind and excess fat, leaving a thin layer. Transfer ham to a roasting pan.
  • 4. Drain peaches. Reserve 1/2 to 1 cup of the light syrup.
  • 5. Whisk together sugar, mustard, peach syrup, and ground cloves (if using) in a bowl. Spoon over ham. Warm preserves until just runny (35-40 seconds in the microwave) and pour over ham as well. Attach peaches to ham with wooden toothpicks. Add 2 cups reserved cooking liquid to roasting pan and bake in middle of oven, basting occasionally, until ham is glazed and juices are bubbling, 30 to 40 minutes. Serve warm or at room temperature.

Tips:

  • Choose the right ham: Select a fully cooked ham for easy slicing and quick preparation. Opt for a bone-in ham for richer flavor, but be prepared for more carving work.
  • Make the glaze ahead: Prepare the peach glaze up to 2 days in advance to allow the flavors to meld. Store it covered in the refrigerator until ready to use.
  • Score the ham: Use a sharp knife to score the ham in a diamond pattern. This helps the glaze penetrate and caramelize during baking.
  • Bake at a low temperature: Bake the ham at a low temperature (325°F) to prevent it from drying out. Baste the ham every 20-30 minutes with the peach glaze to keep it moist and flavorful.
  • Use a meat thermometer: Insert a meat thermometer into the thickest part of the ham to ensure it reaches an internal temperature of 140°F for a fully cooked ham.
  • Let the ham rest: Once the ham is cooked, let it rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the ham, resulting in a tender and succulent texture.

Conclusion:

Peach glazed ham is a classic dish that combines the sweet and tangy flavors of peaches with the savory richness of ham. This recipe provides a step-by-step guide to creating a mouthwatering peach glazed ham that is perfect for special occasions or everyday meals. With its easy-to-follow instructions, helpful tips, and delicious results, this recipe is sure to become a favorite in your kitchen.
