Time 20m

Yield about 12 cookies

Number Of Ingredients 7

3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

PEANUT BUTTER BANANA BREAKFAST COOKIES RECIPE - (4.2/5)

Provided by BearForce

Number Of Ingredients 3

2 small very ripe bananas
1 cup old fashioned oats
1/4 cup natural peanut butter crunchy or creamy

Steps:

  • Preheat oven to 350°F. Mash the bananas in a bowl. Add the oats and peanut butter. Mix. Roll, then flatten 10 to 12 cookies and place on a baking sheet. Bake at 350°F for about 12 minutes or until the cookies are golden brown, as shown.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cookies will be.
  • Don't overmix the dough: Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set: The cookies should be slightly soft in the center when you take them out of the oven. They will continue to cook as they cool.
  • Store the cookies in an airtight container at room temperature: The cookies will stay fresh for up to 3 days.

Conclusion:

These peanut butter banana breakfast cookies are a delicious and healthy way to start your day. They're easy to make and can be customized to your liking. Add your favorite nuts, seeds, or dried fruit to make them even more nutritious. Enjoy!
