1 egg white
1/2 cup chunky peanut butter
1/3 cup brown sugar
1/4 cup honey
1/2 cup (1-stick) unsalted butter, melted
2 cups old fashioned oats

  • In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
  • Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
  • *Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly browned, about 8 to 10 minutes.

WHOLE GRAIN GRANOLA

Whole Grain Granola image

This recipe for a not-too-sweet, olive-oil and honey-enriched granola can be used as a template. Vary the types and amounts of puffed and rolled (also called flaked) grains, coconut and nuts to suit your taste, as long as you use eight cups altogether. And feel free to add chopped dried fruit at the end, stirring it into the granola mix while it's still warm. If you want to add spices, stir a mix of ground cinnamon, ginger, and cardamom into the honey mixture before baking. It's easy to make this recipe your own.

CHEWY, NUTTY, HEALTHY GRANOLA BARS

Chewy, Nutty, Healthy Granola Bars image

Chewy, nutty, chocolaty, and packed with tasty energy, no one will ever know these bars are low-fat and healthy! They're very easy to make and you can pack in everyone's favorite nuts and fruits. My family has now stopped buying Kashi® and chewy bars because we love these so much. These are gluten-free when made with rice flour and appear to be professionally made thanks to the small spoonful of corn syrup that keeps everything tightly combined and gives the bars a nice shine. Have fun experimenting with different combinations of nuts, dried fruits, and toppings! Almond butter works well, too!

Yield 24 bars, 24 serving(s)

Number Of Ingredients 13

2 bananas
1/2 cup light brown sugar
1 cup Splenda granular
2 eggs
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups old fashioned oats
2 cups Puffed Kashi
1/2 cup raisins
1/2 cup dried cranberries

Steps:

  • Heat oven to 350°F.
  • Beat together bananas, brown sugar and splenda until creamy.
  • Add eggs and vanilla, beat until incorporated.
  • Combine flour, baking soda, cinnamon and salt and add to wet mixture.
  • Stir in oats, puff cereal, raisins and cranberries and mix well.
  • Spread evenly in a 13x9 inches baking pan lined with tin foil.
  • Bake for 27-30 minutes until light golden brown.
  • Remove from oven, let cool 1 minute and using tin foil as handles gently lift bars out of the cake pan. Pull away sides of tin foil and let cool completely at room temperature.
  • Once cool, cut into 24 servings.

Tips:

  • Choose the right ingredients. Use high-quality oats, nuts, and seeds. Avoid using processed ingredients or added sugars.
  • Don't overmix the granola bars. Overmixing will make the bars tough. Mix the ingredients just until they are combined.
  • Press the granola bars firmly into the pan. This will help them hold together better.
  • Bake the granola bars until they are golden brown. This will ensure that they are cooked through.
  • Let the granola bars cool completely before cutting them. This will help them set and hold their shape.
