1 package (8 ounces) cream cheese, softened
1 cup sugar, divided
1/2 teaspoon salt
2 large eggs
1/2 cup milk
1/2 teaspoon vanilla extract
1 tablespoon cornstarch
1 can (8 ounces) crushed pineapple, undrained
1 unbaked pastry shell (9 inches)
1/4 cup chopped pecans

Steps:

  • In a large bowl, beat the cream cheese, 1/2 cup sugar and salt until smooth. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla; set aside. , In a small saucepan, combine cornstarch and remaining sugar. Stir in pineapple; bring to a boil, stirring constantly. Boil for 2 minutes. Pour into pastry shell; spoon cream cheese mixture over top. Sprinkle with pecans. , Bake at 400° for 10 minutes. Reduce heat to 325°; bake 45-50 minutes more or until center is set. Cool completely; chill before serving.

It is from the November 2002 issue of "Bon Appetit", Penny and Armin Rembe's Thanksgiving celebration story. Their recipe calls for 2/3 cup pine nuts and 1 cup pecans; feel free to use those measurements, but I've realized that pine nuts really do have a stronger flavor than pecans, so I've lowered the pine nut amount to 1/2 cup and upped the pecans to 1 1/4 cups. Either way, you're bound to enjoy it.

1 cup sugar

2/3 cup light corn syrup
1/2 cup dark corn syrup
1 1/2 tablespoons all-purpose flour
1/8 teaspoon salt

1 large egg white, beaten to blend
lightly sweetened whipped cream

Steps:

1 cup sugar
1 1/2 cups corn syrup
4 eggs
1/4 cup butter
1 1/2 teaspoons vanilla
2 cups mixed nuts
1 unbaked 9-inch pie shell

Steps:

  • In a saucepan boil the sugar and corn syrup together for 3 minutes to dissolve the sugar. Cool slightly.
  • In a large bowl beat eggs lightly and slowly pour the sugar/corn syrup mixture into the eggs, stirring constantly.

1/2 cup boiling water
1/2 cup golden raisins
3 large eggs, room temperature

1/4 cup pecans (about 1 1/4 ounces)
1 tablespoon plus 1 teaspoon sesame seeds
4 whole boned trout
4 teaspoons butter
1 large garlic clove, minced
2 tablespoons vegetable oil

  • Finely chop pine nuts and pecans in processor, using on/off turns. Transfer to shallow bowl. Mix in sesame seeds. Open trout and place skin side down on large baking sheet.
