PEGGI'S BEST BAKED BEANS

PEGGI'S BEST BAKED BEANS image

My Mom made these beans since I could remember. I have made them for about 43 years now. Some aquaintences of ours where we used to live, owned a BBQ place. His wife made baked beans there also. He liked these so well, he would pay me to make him a big pot to take home. Hope you like them as well.

Time 2h30m

Yield 18 servings

Number Of Ingredients 13

4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

PEGGI'S FRIED GREEN BEANS

PEGGI'S FRIED GREEN BEANS image

Hey.....I'm from the South; what more can I say? We fry everything! And...we use bacon in everything! You can use fresh, or canned green beans for this recipe & you will notice the difference over just green beans. The main picture is from fresh green beans (no mushrooms that day)& the other one is from canned green beans. They taste equally as good.

Provided by Peggi Anne Tebben @cookiequeen

Categories     Vegetables

Number Of Ingredients 5

- 6-8 slices thick bacon, cut in 3/4" pieces
- 1/2 onion, slivered
- 1 can mushroom pieces, drained or a handfull of fresh ones, sliced
- 1 quart canned green beans or a mess of fresh ones
- salt & pepper

Steps:

  • Cook bacon & onions in skillet until about 1/2 of the way browned.
  • Add the mushrooms & continue cooking until all is about 2/3 of the way brown. Salt & pepper this.
  • Next, add the green beans & turn heat to low & cover skillet. Leave it alone for about 5 minutes & then you can stir & continue cooking until all is slightly browned.
  • Remove lid & kick up the heat to medium & continue cooking until the beans are done & have a crisper brown , but not burned look. About 30 minutes total. Note: Fresh beans will take a little longer. Also, if you use canned green beans, no need to salt the green beans, but if you use fresh, you can salt them the last few minutes.

Keri's Baked Beans (The World's Best!) image

I was trying to find a good baked bean recipe to bring over to a friends house for a party. I love barbecue, and I frequent a website called The Smoke Ring. The members on the site kept saying over and over again that Keri's Baked Beans were the best, so I decided to give them a try. Let me tell you, they are the BEST. Don't let the apple pie filling scare you... A big thank you goes to Keri for developing this recipe. Enjoy

Time 1h30m

Yield 1 pot, 12 serving(s)

Number Of Ingredients 12

3 -4 slices bacon, diced
2 (28 ounce) cans baked beans, mostly drained (used Bush's Baked Beans. This was modified from the original 2 (16 oz)
1/2 cup barbecue sauce (I make my own sweet & spicy BBQ sauce, but Blues Hog was used in the original recipe)
1 lb pork sausage (The original called for leftover smoked pork or beef, I didn't have any BBQ leftover so I used this)
1 (21 ounce) can apple pie filling (chop up the big chunks some)
1 medium onion, chopped
1/2 green pepper, chopped
1/2 cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons mustard (prepared)
1 teaspoon dried chipotle pepper (or cayenne pepper optional, to taste*)
1 teaspoon your favorite barbecue rub (Blues Hog rub was used in the original)

Steps:

  • Brown pork sausage and remove from pan. When cooled, break into smaller bits.
  • Brown bacon and remove from pan.
  • Saute onion and green pepper in bacon grease and remove from pan.
  • Mix all ingredients into a large baking dish and bake at 325º for 1 hour, or simmer on stove top in large pot for 30 minutes if you don't have time to do them in the oven.
  • This is a rather spicy recipe due to the chipotle/cayenne powder. Feel free to leave it out if you'll be feeding those who prefer a less spicy taste.

Tips:

  • Soak the beans overnight: This will help to reduce the cooking time and make the beans more tender.
  • Use a variety of beans: This will add flavor and texture to the dish. Some good options include pinto beans, navy beans, and black beans.
  • Add some bacon or ham: This will give the beans a smoky flavor. You can also use vegetarian bacon or ham substitutes.
  • Use a flavorful sauce: The sauce is what really makes the baked beans sing. A good sauce will have a balance of sweet, savory, and tangy flavors.
  • Bake the beans low and slow: This will help to develop the flavors and make the beans more tender.
  • Serve the beans with your favorite sides: Baked beans are a great side dish for many different meals. Some popular options include grilled chicken, pulled pork, and cornbread.

Conclusion:

Baked beans are a delicious and versatile dish that can be enjoyed by people of all ages. They are a great source of protein, fiber, and vitamins. With so many different recipes to choose from, there is sure to be a baked bean recipe that everyone will love.
