Penne with Grilled Okra and Green Beans image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 10

8 ounces okra, trimmed and halved lengthwise
8 ounces green beans, trimmed
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1/2 cup panko breadcrumbs
Finely grated zest of 1 lemon
12 ounces penne rigate
1/3 cup grated parmesan cheese
2 cloves garlic, minced
1 cup fresh basil

Steps:

  • Preheat a grill to medium high. Toss the okra and green beans with 2 tablespoons olive oil; season with salt and pepper. Transfer to a sheet of foil or a grill basket with the okra cut-side down. Grill the vegetables, turning occasionally, until lightly charred and tender, 6 to 8 minutes.
  • Transfer to a cutting board. Halve the beans crosswise and halve any large okra pieces lengthwise.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the panko and cook, stirring, until golden, 2 to 4 minutes. Remove from the heat and stir in the lemon zest; season with salt and pepper.
  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 3/4 cup cooking water, then drain the pasta and return to the pot. Stir in the grilled okra and green beans, parmesan and garlic, stirring in enough of the reserved cooking water to loosen. Stir in the basil. Divide among bowls and top with the panko mixture.

PENNE WITH HEIRLOOM TOMATOES, BASIL, GREEN BEANS AND FETA

Penne With Heirloom Tomatoes, Basil, Green Beans and Feta image

Sweet, juicy heirloom tomatoes lend themselves well to uncooked tomato sauces. In summer, I make quick meals out of chopped ripe tomatoes, pasta and green vegetables.

Provided by Martha Rose Shulman

Categories     dinner, lunch, one pot, pastas, appetizer, main course, side dish

Time 50m

Yield Serves four

Number Of Ingredients 10

6 to 8 ounces fresh green beans, trimmed, strings removed if necessary, and broken in half if very long
2 cups chopped fresh ripe tomatoes
2 tablespoons extra virgin olive oil
1 plump garlic clove, minced (more to taste)
Salt (I like to use a very good coarse sea salt or fleur de sel for this)
freshly ground pepper to taste
1 teaspoon balsamic vinegar (optional)
2 tablespoons slivered basil
2 ounces crumbled feta (about 1/2 cup)
3/4 pound pasta (penne or fusilli are good choices)

Steps:

  • Combine the olive oil, tomatoes, garlic, basil, salt and pepper in a large bowl, and let sit for 15 to 30 minutes (or longer).
  • Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the green beans to the boiling water, and boil four to five minutes, depending on how crunchy you like them. Remove with a strainer or skimmer, and transfer to the ice water. Allow to cool for a few minutes, then drain and set aside.
  • Bring the water back to a boil, and add the pasta. Cook until al dente, about eight minutes. When the pasta is ready, drop the green beans back into the water to heat, then drain the pasta and beans and toss at once with the tomato mixture and the feta. Serve hot or room temperature.

5 medium tomatoes, peeled, seeded, and chopped (about 3 cups)
Freshly ground black pepper
1 pound linguini noodle

Add the garlic and cook over mediumlow heat until lightly golden, about 2 minutes. 3 Add the tomatoes and salt and pepper to taste. Cook, stirring occasionally, until the tomatoes thicken and the juices evaporate. Stir in the beans. Simmer 5 minutes more. 4 Meanwhile, bring the pot of water back to a boil. Add 2 tablespoons of salt, then the linguine, gently pushing it down until the pasta is completely covered with water. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta and add it to the skillet with the sauce. 5 Toss the linguine with the sauce in the skillet. Add the basil and cheese and toss again over medium heat until the cheese is creamy. Essential Cooking Guidance and Comprehensive Summary

Essential Cooking Guidance:
  • Cook the green lentils until they are al-dente, or slightly firm to the bit. Al-dente green lentils maintain their texture and will not become overly soft.
  • Use canned green lentils to save time and ensure a consistent texture. Canned lentils are already pre-cooked, eliminating the need for lengthy preparation.
  • Fresh or thawed green lentils can also be used, but they should be soaked in water for at least 6 hours or over-night before cooking. Pre-soaking softens the lentils and helps them to cook more evenly.
  • To check if the green lentils are done cooking, taste a lentil. If it's slightly firm but not crunchy, it's done. If it's too soft, it has been overcooked.
  • Green lentils can be used in a variety of other dish, such as soups, salads, and stews. Keep a supply of green lentils on hand for quick and versatile cooking.
Conclusion:
  • Experiment with different types of herbs and spices to find the combination that you enjoy the most.
  • Leftover penne with green lentils can be stored in an airtight container in the refrigerator for up to 3 days.
  • This recipe is a great opportunity to use up leftover green lentils, or to use up fresh or thawed green lentils.
  • This recipe is a great way to incorporate more legumes into your diet.
  • Legumes are a good source of plant-based protein, fibre, and vitamins
