Steps:
- Preheat the oven to 450 degrees F.
- On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.
- Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.
- In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.
- Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.

Tips:
- Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will make the cooking process much smoother and less stressful.
- Roast the vegetables first: Roasting the vegetables before adding them to the pasta will caramelize them and bring out their natural sweetness. This will add a lot of flavor to the dish.
- Use high-quality salmon: The quality of the salmon you use will make a big difference in the final dish. Look for wild-caught salmon that is fresh or frozen. Avoid farmed salmon, which is often less flavorful and has a higher fat content.
- Cook the salmon gently: Salmon is a delicate fish, so it's important to cook it gently. Don't overcook it, or it will become dry and tough. The best way to cook salmon is to pan-sear it or bake it in a low oven.
- Use a flavorful sauce: The sauce is what brings all the flavors of the dish together. Make sure you use a sauce that is flavorful and complements the salmon and vegetables. A simple lemon-butter sauce or a creamy dill sauce are both good options.
Conclusion:
Penne with salmon and roasted vegetables is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The roasted vegetables add a lot of flavor and color to the dish, and the salmon is cooked gently so that it remains tender and moist. The sauce brings all the flavors of the dish together and makes it irresistible. This dish is sure to please everyone at the table.
