Tips:

  • For the best flavor, use a good quality pork shoulder or butt. It should have a good amount of marbling, which will help to keep it moist during cooking.
  • Be sure to rinse the pork shoulder or butt thoroughly before cooking. This will help to remove any excess salt or debris.
  • If you don't have a Dutch oven, you can use a large pot or roasting pan. Just be sure that it's big enough to hold the pork shoulder or butt and all of the sauerkraut.
  • Don't be afraid to adjust the seasonings to your liking. You can add more or less caraway seeds, juniper berries, or bay leaves, depending on your taste.
  • Serve the pork and sauerkraut with your favorite sides, such as mashed potatoes, roasted vegetables, or dumplings.
