PENNY'S BROCCOLI CASSEROLE

Penny's Broccoli Casserole image

I'm submitting this because my kids and my elders love this....I tend to like my broccoli fresh and steamed! I also usually like to use crushed ritz crackers instead of bread crumbs with this, or just leave them off altogether. This recipe came to me through a school cookbook, which was a collection of recipes other people had gathered together....have no idea who Penny is! But the recipe was submitted by Laura Harms. That is all the credit I can give!!!

Tips:

  • Choose the right broccoli: Look for fresh, vibrant green broccoli with tightly closed florets. Avoid broccoli with yellow or wilted florets, as these signs of age and poor quality.
  • Prepare the broccoli properly: Cut the broccoli into bite-sized florets and blanch them in boiling water for 2-3 minutes, or until they are tender-crisp. This step helps to remove the bitterness from the broccoli and gives it a vibrant green color.
  • Use a creamy sauce: A creamy sauce is essential for a delicious broccoli casserole. You can use a simple white sauce made with butter, flour, and milk, or you can use a more flavorful sauce made with cheese, cream cheese, or sour cream.
  • Add some extras: Feel free to add other ingredients to your broccoli casserole, such as cooked chicken, bacon, or vegetables. These additions will add flavor and texture to the casserole.
  • Bake until golden brown: Bake the casserole in a preheated oven until the top is golden brown and the sauce is bubbly. This usually takes around 20-30 minutes.

Conclusion:

Broccoli casserole is a classic comfort food that is easy to make and loved by people of all ages. With its creamy sauce, tender-crisp broccoli, and cheesy topping, it's a dish that is sure to please everyone at your table. So next time you're looking for a quick and easy weeknight meal, give broccoli casserole a try!
