Tips:

  • Use waxy potatoes: Waxy potatoes, like Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, making them ideal for this dish.
  • Slice the potatoes thinly: Thinly sliced potatoes will cook more evenly and quickly.
  • Layer the potatoes and peppers evenly: This will ensure that everything cooks evenly.
  • Use a baking dish with high sides: This will prevent the liquid from bubbling over.
  • Cover the baking dish tightly: This will help the potatoes and peppers steam and cook more quickly.
  • Bake the dish until the potatoes are tender and the peppers are slightly caramelized: This will typically take about 45 minutes.
  • Serve immediately: This dish is best served hot out of the oven.

Conclusion:

This pepper and potato bake is a simple but flavorful dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. You can use different types of potatoes and peppers, and you can add other ingredients, such as cheese, bacon, or sausage. This dish is also a great way to use up leftover vegetables.
