CRACKERS, CREAM CHEESE, AND PEPPER JELLY
Another childhood favorite of mine for a snack or appetizer. I remember my mom telling my grandma that we should introduce her to "crackers, cream cheese, and pepper jelly" and grandma said, "who are they, your cats?" Lol. This is always a hit. Nowadays with my IBS I'd have to substitute regular or light or fat-free cream cheese with a non-dairy version, such as Tofutti Better Than Cream Cheese. You can purchase the tub and spread the cream cheese from that, or you can buy the brick-style cream cheese (although I don't think Tofutti makes a brick-style) and spread the pepper jelly on top, refrigerate, and then spread on the crackers. I always did it from the tub. Serving size is an estimate, depends on how much of each ingredient you want to use. Cook time is chill time if you use the brick-style. You should be able to find the pepper jelly in the regular jam/jelly section of your supermarket.

Steps:
- If using brick cream cheese, you can spread the pepper jelly over the entire brick and refrigerate then place on serving plate with wheat crackers.
- Otherwise, just spread desired amount of cream cheese on a cracker, then top with desired amount of pepper jelly. Enjoy! :).

Steps:
- Mix all ingredients in food processor.
- Spray individual pie pan or 6" spring form pan with nonstick cooking spray. (I found 4" spring forms and I divide into 2).
- Pour mixture into pan(s).
- Bake in preheated 350 degree oven for 30-35 minutes.
- Cool in refrigerator for several hours.
- Spread top with more pepper jelly. Serve with crackers.
Tips:
- For a sweeter pepper jelly, use a milder pepper, such as a yellow or orange bell pepper. For a spicier pepper jelly, use a hotter pepper, such as a jalapeño or habanero pepper.
- If you don't have time to make your own pepper jelly, you can use store-bought pepper jelly. Just be sure to choose a good quality pepper jelly that is made with real peppers.
- For a creamier spread, use a full-fat cream cheese. For a lighter spread, use a low-fat or fat-free cream cheese.
- If you don't have any fresh herbs on hand, you can use dried herbs. Just be sure to use half the amount of dried herbs as you would fresh herbs.
- Serve the pepper jelly cream cheese spread with crackers, vegetables, or fruit. You can also use it as a spread for sandwiches or wraps.
Conclusion:
Pepper jelly cream cheese spread is a delicious and easy appetizer or snack that can be enjoyed by people of all ages. It's a great way to use up leftover pepper jelly and cream cheese, and it's also a perfect dish for parties and potlucks.
