1/2 cup dried cranberries
1/4 cup Cognac
1 1/2 tablespoons whole black peppercorns
4 filets mignons, 6 ounces each
Coarse sea salt
3 tablespoons unsalted butter, preferably European style
1/3 cup well-flavored beef stock

Steps:

  • Place cranberries in a saucepan, cover with water, bring to a boil, and simmer 5 minutes. Drain, refresh with cold water, drain and place in a bowl. Add Cognac.
  • Coarsely crush peppercorns in a mortar. (Wrap a towel over mortar at first so peppercorns do not fly about.) Spread crushed peppercorns on a platter.
  • Salt fillets on both sides. Place on peppercorns and press to slightly flatten steaks and embed with peppercorns. Repeat on other side.
  • Heat half the butter in a skillet just big enough to hold fillets. When butter begins to brown, add fillets and cook over medium heat, 2 to 3 minutes a side, until slightly underdone to your taste. Transfer steaks to a platter. Pour excess fat from skillet.
  • Add cranberries and Cognac to skillet and cook briefly over low heat. Add stock and cook sauce until slightly reduced, about 2 minutes. Check sauce for seasoning, adding salt if needed. 2 tablespoons whole white peppercorns
1/4 cup olive oil
1 tablespoon cognac
2 tablespoons fresh thyme leaves, chopped
1 teaspoon coarse salt, plus more for beef
1 whole beef filet (about 5 pounds), trimmed of excess fat and silver skin, and tied

Steps:

  • Cover a baking sheet with plastic wrap; set aside. In a spice grinder, coarsely grind the black and white peppercorns. Strain through a fine sieve, reserving powder for another use. Transfer ground peppercorns to a small bowl. Stir in oil, cognac, thyme, and salt.
  • Spread half of the pepper mixture lengthwise down the center of the prepared baking sheet. Top with filet, rolling to coat. 1 cup loosely packed fresh flat-leaf parsley, finely chopped, plus additional parsley for garnish
3 tablespoons Dijon mustard
2 tablespoons unsalted butter, at room temperature

2 1/2 pounds center-cut beef tenderloin, trimmed and tied if uneven
Savory Horseradish Panna Cotta, recipe follows, optional
Cooking spray
1 cup sour cream
3 tablespoons Dijon mustard
2 tablespoons prepared horseradish
Kosher salt
1 3/4 cups half-and-half
2 teaspoons gelatin (from a .25-ounce package)
2 tablespoons thinly sliced fresh chives

Steps:

  • Coarsely grind the peppercorns in a spice or coffee grinder and transfer to a medium bowl. Add the parsley, mustard, butter and 1 tablespoon salt in a medium bowl and mix together until thoroughly combined. Rub the spiced butter all over the tenderloin, rolling the beef in the portions that fall off to coat completely. The beef can be prepared up to this point, covered, and refrigerated up to 1 day in advance.
  • Preheat the oven to 450 degrees F.
  • Place the beef on a rack and set over a baking sheet. Roast until a meat thermometer inserted into the center registers 130 degrees F for medium rare, about 35 minutes. Remove from the oven and let stand for 10 minutes. Transfer the beef to a cutting board, preferably a meat board with a reservoir to catch the juices, and garnish with the parsley.
  • Spray six 4- to 6-ounce ramekins with cooking spray. Stir together the sour cream, Dijon, horseradish and 1 teaspoon salt in a small bowl. Heat the half-and-half in a small saucepan over medium-high heat until it just barely comes to a simmer.
  • Meanwhile, put the gelatin in a large bowl, add 3 tablespoons warm water and stir until completely dissolved. Gradually pour in the warm half-and-half while whisking constantly.
  • Add a splash of the half-and-half mixture to the sour cream mixture and stir to loosen, then add the sour cream mixture to the large bowl with the half-and-half mixture, whisking gently until thoroughly combined.
  • Pour the mixture into the ramekins (the ramekins will not be full) and refrigerate until set, at least 4 hours. The panna cottas can be kept refrigerated, covered with plastic wrap, up to 2 days
  • When ready to serve, run a thin knife along the edge of each ramekin and invert the pana cottas onto plates. Sprinkle with the chives and serve immediately.

1 tablespoon soy sauce
1 tablespoon garlic, minced
1/4 teaspoon red pepper flakes (feel free to use more)
1 lb tenderloin or 1 lb rib eye steak
2 tablespoons peanut oil or 2 tablespoons vegetable oil, divided
1 small red bell pepper, cut into thin strips
1 small yellow bell pepper, cut into thin strips
1 small red onion, but into thin strips
1/4 cup stir-fry sauce
2 tablespoons rice wine or 2 tablespoons dry white wine
1/4 cup coarsely chopped fresh parsley
hot cooked white rice (optional) or Chinese egg noodles (optional)

Steps:

  • Combine soy sauce, garlic and pepper flakes in medium bowl.
  • Cut beef lengthwise in half, then crosswise into thin slices.
  • Toss beef with soy sauce mixture and marinade for at least 30 minutes (or overnight).
  • Heat wok or large skillet over medium-high heat.
  • Add 1 tablespoon oil and heat until hot.
  • Add half of beef mixture.
  • Stir-fry until beef is barely pink in center.
  • Remove.
  • Repeat with remaining beef mixture.

1 tbsp vegetable oil
25g clarified butter (see Know-how, below)
2 fillet steaks (ideally beef matured for 3-5 weeks), about 140g/5oz each, at room temperature
knob of butter
2large shallots , finely chopped
6medium mushrooms , sliced
2 tsp green and pink peppercorn , crushed
3 tbsp brandy
100ml red wine
200ml good-quality beef stock
3 tbsp double cream

Steps:

  • Heat a frying pan over a medium-to-high heat, then pour in the oil and the clarified butter. Season the steaks with salt and plenty of freshly ground black pepper and cook to your liking (2 mins each side for medium-rare, 3 mins each side for medium, depending on the thickness of your steaks). Be sure to seal the rounded edges, too. Transfer to a plate.
  • Add the knob of butter to the pan, then fry the shallots, mushrooms and peppercorns over a medium heat for 5 mins, until the shallots have softened and the mushrooms browned. Return the steaks to the pan. Heat the brandy in a metal ladle, light with a match then carefully pour into the hot pan, standing as far back as you can. Once the pan has stopped flaming, remove the steaks again.
  • Pour the wine into the pan, turn up the heat and boil rapidly until reduced by half. This will take about 5 mins. Add the stock and reduce again, this time by two-thirds. Stir the cream in to the sauce and allow it to thicken slightly. Check the sauce for seasoning, then return the fillets to the pan to warm through, spooning the sauce over. Serve straight away.

1/4 cup cracked black peppercorns
2 crushed garlic cloves
2 bay leaves
2 sprigs fresh rosemary or 1 teaspoon dried
1 cup dry red wine like Pinot Noir
1 tablespoon olive oil
1 tablespoon red wine vinegar
Salt to taste
1/2 cup chicken broth, fresh or canned
1 teaspoon tomato paste
2 tablespoons butter

Steps:

  • Rub the fillet with the cracked black pepper. Place in a non-aluminum deep dish, and add the garlic cloves, bay leaves, rosemary, red wine, olive oil, vinegar and salt. Cover, and let stand for 30 minutes. Drain, pat dry, and reserve marinade.
  • Preheat the oven broiler to high, or prepare the charcoal.
  • If the fillet is to be cooked in an oven broiler place it on a rack about 3 inches from the heat source. Broil, turning and searing evenly all around, for about 12 to 15 minutes for rare. Cook longer for well done. Transfer to a warm platter and keep warm. If the fillet is to be cooked on a hot clean grill, place the fillet on the grill. Cook and sear all around evenly for about 12 to 15 minutes for rare.
  • Meanwhile transfer the marinade to a small saucepan and over high heat reduce by half. Add the chicken broth, tomato paste and any juices that may have accumulated around the fillet.
  • Reduce sauce by more than half, stir in butter and check seasoning.
  • Slice the meat into thin slices and serve with the sauce.
