PEPPERED PORK WITH CARAMELIZED PEARS AND ROSEMARY POTATOES

1/2 cup sugar
1 vanilla bean, split and scraped
1 stick butter
2 pears, sliced
Peppered Pork, recipe follows
Caramelized Onions, recipe follows
Rosemary Potatoes, recipe follows
2 cups chicken stock
4 medium pork chops
Black pepper, coarsely ground
8 ounces cream cheese
8 ounces Stilton cheese
2 tablespoons olive oil
3 medium red onions, sliced
Salt and pepper
Olive oil, for sauteing
2 large white potatoes
Fresh rosemary, several sprigs
Salt and pepper

Steps:

  • Combine the sugar, vanilla bean and butter in a medium sized saute pan over medium heat. Cook until the butter melts and the sugar is golden. Add the pear slices to the pan and cook until tender. Remove the pears from the pan and set aside. Reserve the sauce in the pan for the pork marinade.
  • Pour approximately 2 cups of chicken stock into the pan of reserved pear sauce. Over medium heat, reduce the liquid by 1/2. Remove the pan from the heat and allow the mixture to cool. Marinate the pork chops in the liquid for 1 hour. Remove the chops from the marinade and coat each side with coarsely ground black pepper.
  • In a separate medium sized saute pan, pan-sear the pork chops on 1 side for 5 minutes, turn and sear the other side for about 3 minutes or until desired doneness is reached.
  • While the pork chops are cooking, combine cream cheese and Stilton in a medium sized mixing bowl. Cream the cheeses together with a hand blender until they are combined. Once the pork chops are thoroughly cooked, liberally spread the cheese on top of each piece. Serve with pears, caramelized onions and rosemary potatoes.
  • In a medium sized saute pan, heat olive oil over medium heat. Add the sliced onions to the pan and season, to taste, with salt and pepper. Cook the onions until they caramelize.
  • Set aside.
  • In a medium sized saute pan, heat olive oil over medium heat. Clean the potatoes, and then slice them into thin rounds. Saute the potatoes in the oil with rosemary and salt and pepper. Cook the potatoes until they are brown on both sides. When the potatoes are done, remove them from the pan and drain the excess oil. Set aside.

CHICKEN FRIED STEAK:
4 Omaha Steaks Top Sirloin Steaks
Salt and freshly ground black pepper to taste
1 cup all-purpose flour, or as needed
2 large eggs, beaten
Vegetable oil, for frying
MASHED POTATOES
1-1/2 pounds russet potatoes, peeled and quartered
3 tablespoons butter
1/2 cup milk, or as needed
Salt and freshly ground black pepper, to taste
PEPPERED CREAM GRAVY
3 tablespoons all-purpose flour
Salt and freshly ground black pepper, to taste
1-1/2 cups milk, at room temperature

Steps:

  • Place the potatoes in a saucepan of cold salted water and bring to a boil. Reduce the heat and simmer for about 20 minutes, or until just tender. Drain the potatoes and return to the saucepan. Place the pan over low heat and let the potatoes dry for 2 to 3 minutes, shaking constantly. Add the butter and mash with a potato masher until fairly smooth. Stir in enough milk to reach a creamy consistency, season with salt and pepper, and continue to cook until heated through. While the potatoes are boiling, pat the steaks dry and season with salt and pepper. Sift the flour onto a plate and dredge the steaks in flour. Using the flat side of meat cleaver or rolling pin, pound out the steaks until they are about 1/4 to 3/8 inch thick. Dredge again in the flour, shaking off any excess. Dip the steaks into the beaten eggs, and then again in flour, making sure all of the beef is well covered with flour. Pour enough oil into a large skillet to come about 1/4 inch up the sides and set over medium-high heat. When the oil is hot, carefully add the steaks with tongs and cook for 3 to 4 minutes on each side, until golden brown. Remove the steaks and keep warm. To prepare the gravy, pour off all but 2 tablespoons of the oil and remove any burnt drippings from the skillet. Reduce the heat to medium, and add the flour, salt, and pepper. Cook for 2 or 3 minutes, stirring constantly, until the flour is light golden. Slowly whisk in the milk, about 1/2 cup at a time. Reduce the heat to medium-low, and simmer until the gravy is thick and creamy, stirring constantly, about 7 or 8 minutes. Season again with salt and pepper, if necessary. Serve the gravy over the chicken-fried steaks and mashed potatoes.

2 (24-ounce) bags microwavable peeled and cut potatoes (recommended: Ore-Ida Steam n' Mash)
2 cups light cream
1/2 stick unsalted butter
6 sprigs fresh thyme
8 ounces peppered goat cheese, at room temperature
2 teaspoons salt
1 teaspoon fresh ground pepper

Steps:

  • Microwave the potatoes according to package directions.
  • While the potatoes are cooking, in a medium pot over medium heat, warm the cream with the butter, thyme, salt and pepper. Don't let it boil.

1/2 c green bell pepper
1/2 c red bell pepper
1/2 c onion
2 tsp garlic minced
2 tsp sugar
1 tsp salt
1 tsp pepper
2 medium beef smoked sausage (i used hillshire farms)
3 large potatoes (idaho) - 8 red or yukon gold scrubbed skin on

Steps:

  • 1. Spray skillet with cooking spray. Put first 3 ingredients (peppers and onions) in food processor and mince until a fine paste. Put these in a large skillet on med heat. Add garlic. Saute and stir occasionally while preparing sausage.
  • 2. Next, put sausages in food processor and chop until very fine. Add these to peppers and onions in skillet and continue to stir and saute. Sprinkle in salt, black pepper and sugar.
  • 3. Now chop potatoes into very small cubes. Add these to skillet, turn to low heat and cover. Continue to cook, stirring every 5 minutes until potatoes are tender. Around 30 minutes.
