One-pot Lemon Pepper Chicken & Rice Recipe by Tasty image

Here's what you need: lemon pepper, paprika, garlic, olive oil, chicken thighs with skin, butter, yellow onion, arborio rice, white wine, chicken broth, milk, pepper, parmesan cheese, fresh parsley

Provided by Claire Nolan

Categories     Dinner

Yield 4 servings

Number Of Ingredients 14

3 tablespoons lemon pepper
1 tablespoon paprika
2 cloves garlic, minced
1 tablespoon olive oil
2 lb chicken thighs with skin
4 tablespoons butter
1 yellow onion, diced
1 ½ cups arborio rice
¼ cup white wine
4 cups chicken broth
1 ½ cups milk
pepper, to taste
1 cup parmesan cheese
¼ cup fresh parsley, optional

Steps:

  • Combine lemon pepper, paprika, and 2 cloves of minced garlic in a small bowl.
  • In a large oven-proof pot, heat olive oil on medium heat. Season both sides of the chicken and place in the pot skin side down. Cook for three minutes, turn the heat up to medium high and cook for an additional two minutes (or until browned). Turn the chicken over and cook for another 3-4 minutes. Remove chicken from the pot and set aside. (Don't worry! It will finish cooking when you put it in the oven.)
  • With a paper towel, carefully wipe out excess fat, leaving the seasoning.
  • Preheat your oven to 350˚F (175˚C).
  • On medium high, melt two Tbsp. of butter in the pot and add the diced onions and the rest of the minced garlic. Cook until onions are translucent (1-2 minutes).
  • Add the rice and stir until it becomes translucent (1-2 minutes).
  • Pour in the white wine and let it cook until most of the wine has evaporated (about two minutes).
  • Add the chicken broth, one cup of milk, and a dash of pepper and stir. Bring it to a simmer.
  • Place the chicken back into the pot. Cover with a lid or foil and bake for 30 minutes (remove lid after 20 minutes).
  • Remove the chicken from the pot and broil on high for 2-3 minutes or until the skin has nicely browned.
  • Add the other two Tbsp. butter, parmesan, ½ cup (118 ml) of milk and parsley to the rice. Stir until well combined. Return the chicken on top of the rice.
  • Enjoy!

PIRI-PIRI CHICKEN WITH SPICY RICE

Piri-piri chicken with spicy rice image

Use a lime-spiked spicy marinade to coat thighs and drumsticks then roast and serve with paprika rice for a cheap and healthy supper

Provided by Lucy Netherton

Categories     Dinner, Main course

Time 1h5m

Number Of Ingredients 9

about 4 skin-on chicken thighs and 4 drumsticks- buy a mixed pack
6 tbsp piri-piri marinade (you can buy mild, medium or hot)
1 tbsp sunflower oil
2 peppers , any colour, deseeded and finely chopped
½ bunch spring onions , sliced, white and green parts separated
4 tbsp tomato purée
1 tbsp sweet smoked paprika
250g cooked rice
vegetables or salad , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Slash each piece of chicken 3 times, so the marinade can really flavour the meat. Pour over the sauce and leave in the fridge to marinate, if you have time. If not, mix well and arrange, skin-side up, in a roasting tin. Cook for 30 mins, then increase heat to 220C/200C fan/gas 7 and cook for about 15 mins more until the skin is crispy and golden.
  • When the chicken is almost ready, heat the oil in a frying pan. Cook the peppers and white parts of the spring onions for 5 mins. Tip in the purée and paprika, stir, then add the rice, breaking up with a wooden spoon so all the grains are coated well. Use a high heat and scrape any that sticks off the bottom so you get some soft and some crispy parts. Heat until piping hot. Scatter the green parts of the spring onion on top and serve with the chicken, and some vegetables or salad, if you like.

PEPSI CHICKEN & RICE

HOWEVER, my hubby doesn't care for the rice so I always make him some plain rice seperate. The best part about this recipe is you can increase or decrease it depending on your needs.

PESTO CHICKEN AND RICE

Pesto Chicken and Rice image

Provided by Elena Besser

Categories     main-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 12

1/2 cup plus 3 tablespoons olive oil
1 medium fennel bulb, diced
1 pound boneless, skinless chicken breast, cut into cubes
Kosher salt and freshly ground black pepper
2 shallots, diced
1 cup long-grain white rice
2 cups chicken broth
1/2 cup pine nuts
2 cups tightly packed basil leaves, plus more for garnish
4 small or 2 large garlic cloves
1 1/2 cups finely grated Parmesan (5 ounces)
3 tablespoons unsalted butter, optional

Steps:

  • Heat 3 tablespoons of the oil in a large skillet over medium-high heat. Add the fennel and cook, stirring frequently, until it begins to become translucent, 3 to 4 minutes. Add the chicken and season with salt and pepper. Add the shallots and continue to cook until the chicken is browned on all sides, about 3 minutes.
  • Add the rice and cook, stirring, until it is toasted, about 2 minutes.
  • Stir in the broth and bring the mixture to a boil. Reduce the heat so the broth simmers; cover the skillet and simmer until the rice is tender, 15 to 20 minutes.
  • Bring a medium saucepan of water to a roaring boil.
  • Meanwhile, fill a small bowl with ice water. Set aside.
  • Cook the pine nuts in a medium skillet over medium heat, shaking frequently, until lightly toasted, 3 to 5 minutes. Keep an eye on them, as they can burn quickly.
  • When the water is boiling, add a handful of salt (you want the water as salty as the ocean), then add the basil leaves. Use a slotted spoon, small strainer or spider to press down the leaves, making sure they're fully submerged in the water. Count to five, remove the leaves with the slotted spoon and immediately plunge them into the ice water for 1 to 2 minutes.
  • Remove the basil from the ice water and squeeze out excess water.
  • Put the toasted pine nuts in a food processor. (If you don't have a food processor, a blender is fine.) Pulse to chop the nuts. Add the garlic and basil and pulse. Once a creamy, green paste forms, with the motor running, slowly pour in the remaining 1/2 cup of olive oil, processing until the oil is fully incorporated. Transfer the paste to a medium bowl and fold in 1 cup of the Parmesan with a rubber spatula. Season with salt and pepper. Set aside.
  • Remove the skillet from the heat and stir in the pesto and butter, if using. Serve the chicken and rice topped with fresh basil and the remaining 1/2 cup Parmesan.
