PERFECT BUTTERMILK PANCAKES

Perfect Buttermilk Pancakes image

Pancakes are the hero of the breakfast table, and their very taste can even be described as "deeply breakfasty": eggy, salty, just this side of sweet. A little indulgent and yet still somehow appropriate first thing in the morning, those fluffy stacks with crisped edges, dripping with maple syrup, are everything you want, exactly when you want them. Here is how to get to them right every time, whether it's a lazy Sunday morning or a hurried weekday.

Categories     breakfast, brunch, pancakes, main course

Time 10m

Yield 4 servings

Number Of Ingredients 9

2 cups all-purpose flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/4 teaspoons kosher salt
2 1/2 cups buttermilk
2 large eggs
3 tablespoons unsalted butter, melted
Vegetable, canola or coconut oil for the pan

Steps:

  • Heat the oven to 325 degrees. Whisk flour, sugar, baking powder, baking soda and kosher salt together in a bowl. Using the whisk, make a well in the center. Pour the buttermilk into the well and crack eggs into buttermilk. Pour the melted butter into the mixture. Starting in the center, whisk everything together, moving towards the outside of the bowl, until all ingredients are incorporated. Do not overbeat (lumps are fine). The batter can be refrigerated for up to one hour.
  • Heat a large nonstick griddle or skillet, preferably cast-iron, over low heat for about 5 minutes. Add 1 tablespoon oil to the skillet. Turn heat up to medium-low and using a measuring cup, ladle 1/3 cup batter into the skillet. If you are using a large skillet or a griddle, repeat once or twice, taking care not to crowd the cooking surface.
  • Flip pancakes after bubbles rise to surface and bottoms brown, about 2 to 4 minutes. Cook until the other sides are lightly browned. Remove pancakes to a wire rack set inside a rimmed baking sheet, and keep in heated oven until all the batter is cooked and you are ready to serve.

PERFECT POTATO PANCAKES

Perfect Potato Pancakes image

I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

PERFECT WHOLE WHEAT PANCAKES

Perfect Whole Wheat Pancakes image

This recipe comes from the Tassajara Bread Book. I like whole wheat but I hate the heaviness of the finished recipe and usually halve it with white flour. This recipe defies all of that. They are so good. The genius who created this recipe should get a medal. I have used powdered milk in place of regular milk for this and found no difference. I'm saying 8 pancakes in yield, but it really varies on the size you like your pancakes. Additional note: you can substitute applesauce for the oil (use the same amount) and they turn out exactly the same with a lot less calories.

MARTHA'S PERFECT PANCAKES

Martha's Perfect Pancakes image

Make and share this Martha's Perfect Pancakes recipe from Food.com.

Provided by Loves-2-Cook

Categories     Breakfast

Time 25m

Yield 12 pancakes

Number Of Ingredients 5

2 eggs
1 cup milk
3 tablespoons melted butter (I just use canola oil, easier than measuring & melting butter)
1 1/2 cups self rising flour
2 -3 tablespoons sugar (I usually add double)

Steps:

  • Heat griddle or large skillet to medium-high heat (375 degrees F.). Grease lightly with oil.
  • In medium bowl, beat eggs. Add milk and melted butter; mix well. Add all remaining ingredients; stir just until large lumps disappear.
  • For each pancake, pour about 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until bubbles begin to break on surface. Turn; cook 1 to 2 minutes or until golden brown.
  • My tips: I use a skillet and heat between med-low to medium. I think it makes no difference in which order the ingredients are added and mixed. I double the recipe in order to have enough to feed my bunch. If you don't have self rising flour you can make it by adding 1 teaspoon baking powder & 1/4 teaspoons salt to every cup of all purpose flour used in your recipe. This was the first homemade mix I ever tried. I had always made from a box. I have yet to find a homemade recipe for pancakes that measure up to this one. Hope you enjoy them!

PERFECT, PLATE-SIZE PANCAKES

Perfect, Plate-Size Pancakes image

These pancakes are thick and fluffy, and the center stays moist and tender. After a lot of attempts to find a perfect pancake recipe, I made this one up, and have been so happy with the results!

Provided by anaisfern

Categories     Breakfast

Time 35m

Yield 6 serving(s)

Number Of Ingredients 10

2 1/2 cups flour (some wheat flour may be substituted- I have been successful with 2 cups regular and 1/2 cup wheat fl)
1 1/2 teaspoons baking soda
3 teaspoons baking powder
1/4 teaspoon salt
2 -3 tablespoons sugar
2 cups milk, with about
1 teaspoon lemon juice, stirred in to make it curdle (I use 1% milk normally, but any will do)
4 tablespoons vegetable oil
1 egg
1 teaspoon vanilla

Steps:

  • Stir the dry ingredients (flour, sugar, salt, baking powder and baking soda) together in good sized bowl.
  • Measure out milk and mix in lemon or lime juice.
  • Let it sit a few moments.
  • Make a well in the dry ingredients.
  • Pour in the milk, oil, egg and vanilla.
  • Whisk all the ingredients together until the batter is fairly smooth; there should only be a few small lumps.
  • Melt enough butter in the bottom of a frying pan to coat it evenly; after it has melted, wipe out any excess with a paper towel or napkin.
  • The pan should be over medium heat.
  • Once the pan is heated, pour about 1/2 cup batter in (or, adjust to fit the size of the pan).
  • Allow the pancake to cook several minutes, until the edges are cooked and there are bubbles appearing and bursting in the middle of the cake.
  • Flip the pancake, and allow to cook about 2 minutes on the raw side.
  • After a minute or two on this side, the cake will raise up and become thicker.
  • Once this happens, only cook the cake another minute or so, until the pan-side is nicely golden.
  • If the bottoms of the cakes are browning too fast, before there are bubbles in the middle or the second side can rise, then turn the heat down on the stove.
  • If the opposite problem is occuring, increase the heat.
  • After a couple, it'll be just right!
  • This recipe makes 6 enormous pancakes; I would imagine that, made a more normal size, it would yield about 12.

SIMPLY PERFECT PANCAKES

Simply Perfect Pancakes image

Malt, rather than sugar, is what sweetens most food-service (i.e., restaurant/hotel) pancake mixes. For that typical "diner" taste, try malt in your pancakes instead of sugar. From King Arthur flour.

Provided by Pinay0618

Categories     Breakfast

Time 30m

Yield 24 3-inch pancakes

Number Of Ingredients 7

2 large eggs
1 1/4 cups milk
3 tablespoons melted butter or 3 tablespoons vegetable oil
1 1/2 cups king arthur unbleached all-purpose flour
3/4 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar or 1/4 cup instant malted milk powder

Steps:

  • Beat the eggs and milk until light and foamy, about 3 minutes at high speed of a stand or hand mixer. Stir in the butter or vegetable oil.
  • Whisk the dry ingredients together to evenly distribute the salt, baking powder and sweetener.
  • Gently and quickly mix into the egg and milk mixture. Let the batter rest for at least 15 minutes, while the griddle is heating; it"ll thicken slightly.
  • Heat a heavy frying pan over medium heat, or set an electric griddle to 350°F Lightly grease frying pan or griddle. The pan or griddle is ready if a drop of water will skitter across the surface, evaporating immediately.
  • Drop 1/3 cupfuls of batter onto the lightly greased griddle. Bake on one side until bubbles begin to form and break, then turn the pancakes and cook the other side till brown. Turn over only once. Serve immediately.

PERFECT POTATO PANCAKES

Perfect Potato Pancakes image

Homemade potato pancakes take more time than other recipes, but they're not hard, and they're worth the extra effort! Make 'em for Hanukkah or a special side dish or appetizer. They'll taste the love!

Provided by Penny Hall

Categories     Potatoes

Time 25m

Number Of Ingredients 9

4 lbs baking potatoes, peeled and chunked
1 large onion, quartered
1/2 cup all purpose flour
1/4 cup plain bread crumbs or panko crumbs
1 tsp baking powder
2 tsp salt
1 tsp black pepper
2 eggs, beaten
1/2 cup vegetable oil

Steps:

  • 1. In a food processor, process the potatoes and onions, in batches, until finely chopped. Empty each batch into a strainer and, using a spoon, press down on the mixture to remove as much water as possible. In a large bowl, combine the drained potato-onion mixture, the flour, bread crumbs, baking powder, salt, pepper, and eggs; mix well. Heat the oil in a large skillet over medium heat. Using a serving spoon, spoon about 1/4 cup batter for each pancake into the hot oil, flattening into a pancake shape. Cook for 2 to 3 minutes per side, until golden on both sides. Drain on a paper towel-lined platter and serve warm. Make these small if you want to serve them as appetizers. Serve with the traditional fixin's of applesauce and sour cream

Tips:

  • Use the right ingredients: Make sure you have all the necessary ingredients and that they are fresh and of good quality.
  • Follow the recipe carefully: Don't skip any steps or substitute ingredients unless you know what you're doing.
  • Use the right pan: A non-stick pan is best for pancakes, and make sure it's hot before you start cooking.
  • Don't overcrowd the pan: Cook pancakes in batches, leaving enough space between them so they can cook evenly.
  • Flip pancakes at the right time: Flip pancakes when bubbles start to form around the edges and the underside is golden brown.
  • Don't overcook pancakes: Pancakes should be cooked through but still fluffy. Overcooking will make them tough.
  • Serve pancakes immediately: Pancakes are best served hot off the griddle. If you need to keep them warm, place them in a preheated oven at 200°F.

Conclusion:

With a little practice, you'll be able to make perfect pancakes every time. Just remember to use the right ingredients, follow the recipe carefully, and cook pancakes at the right temperature. And don't forget to enjoy your delicious pancakes with your favorite toppings!
