Yield 4 to 6 servings

Number Of Ingredients 7

1 small whole salmon, approximately 2 1/2 pounds
4 spring onions (scallions)
6 sprigs fresh tarragon
12 sprigs fresh parsley
1 lemon
2 teaspoons unsalted butter, approximately
1/2 cup dry white wine (more if needed)

Steps:

  • Preheat oven to 350 degrees.

It's an elegant dish for a large group - the recipe ultimately serves 12 - but it comes together quickly. Serve it, as a commenter suggests, with a homemade tartar sauce.

Tips:

  • Use the freshest salmon possible. Fresh salmon will have a bright pink color and a mild, fishy smell. Avoid salmon that is dull in color or has a strong, fishy smell.
  • Poach the salmon in a flavorful liquid. You can use water, broth, wine, or even milk. Add herbs, spices, and vegetables to the liquid to create a flavorful poaching liquid that will infuse the salmon with flavor.
  • Gently simmer the salmon. Do not boil the salmon, as this will make it tough. Bring the poaching liquid to a gentle simmer and then reduce the heat to low. The salmon should be cooked through but still moist and flaky.
  • Do not overcook the salmon. Overcooked salmon will be dry and tough. Cook the salmon until it is just opaque in the center. You can check the doneness of the salmon by inserting a fork into the thickest part of the fish. If the fork comes out easily, the salmon is done.
  • Serve the salmon immediately. Poached salmon is best served immediately after it is cooked. You can serve it with a variety of sides, such as roasted vegetables, rice, or potatoes.

Conclusion:

Poached salmon is a healthy and delicious way to enjoy this versatile fish. It is a simple dish to make, and it can be tailored to your own personal taste. With a little practice, you can poach salmon like a pro. So next time you are looking for a quick and easy weeknight meal, give poached salmon a try. You won't be disappointed!
